Ok, I just had to throw that photo up there. I know it’s a strange photo for a weekly menu post, but come on, it’s funny. For those of you that know Eli, you gotta love this photo. This is how Eli entertains us on a Friday night (I know, we have such exciting Friday nights here at the Grandy house). He puts on some black glasses, hikes his shorts way high so that they’re at the middle of his waist, tucks in his shirt and plays nerd. He tells us the funniest jokes and has this hilarious laugh that he does after each of his jokes. He is a funny guy!  Right now he is thrilled that I posted this photo on my weekly menu, but when he’s a teenager, I’m not so sure he will be as thrilled.

Speaking of funny things, here’s a funny story that happened to me recently. I was making up a batch of vodka pasta so I clicked on my recipe and got started. I noticed that it wasn’t a very detailed recipe.  It was one of the first recipes that I had posted on the blog and I honestly had trouble following it. I wasn’t too detailed in my posts when I first started the blog so I had forgotten how long to simmer the sauce for.  I had to call my friend Amanda (as she makes this recipe all the time and initially got it from my blog) to get the specifics. She was cracking up because I couldn’t even follow my own instructions, LAME, I know!  I realize that I like the extra details and the step-by-step info for myself.  It really helps me. So I updated the recipe and photos for you all so you won’t have any problems when you make it, because you should, as t’s really good. Nice description there, really good, but that’s all I could come up with as my brain is fogging out as I write this.

Ok, enough said, let’s move onto this weeks menu.

Sunday night dinner

Italian wedding soup. Eli has been begging me to make this soup, and we really haven’t had it since Christmas break, so I figured I would throw him a bone since he let me post that hilarious photo of him this week. I plan on serving it up with some fresh popovers.

Penne a la vodka, crispy garlic bread and kid friendly caesar salad.  This is a meatless Monday night comfort dinner. I love everything about this meal and what I especially love is that it’s a two-nighter dinner. Oh yeah!

We’re having leftovers baby. Take a look at the above dinner menu and that’s what were having tonight. See, I told you that all three of the above recipes are good for two nights, I don’t lie folks.  The best part is that the pasta tastes better day two.

Wednesday night dinner

This is such an easy week for me as we’re having leftovers yet again!  Tonight we will be having leftovers of the Italian wedding soup and I think I’ll be nice and whip up some fresh popover.

Thursday night dinner

Happy Valentines day peeps!  We’re staying home and celebrating as a family because we all just LOVE each other so much. What’s on the dinner menu?  Well, it looks like we’re in for some spring-like weather so John is going to fire up the grill and grill up some of our favorite turkey burgers. I plan on roasting up some cauliflower and making up a fresh batch of chocolate cupcakes with cream cheese frosting.  I’m going to throw some red and pink sprinkles on them and some candy hearts for the kiddos.

Guess what I’m posting Wednesday? I’m posting another quinoa patty recipe! Yippee.  These ones are a bit more kid friendly and cheesy.

  1. I love that picture of your son…it sure brought a smile to my face….i think it is a perfect way to start your weekly menu post! I am so excited to see your quinoa patty recipe..i love quinoa but don’t cook with it nearly as much as i should..no idea why not? ok you are too funny about your vodka sauce recipe..i think sometimes when i type a post i am not even paying attention ’cause when i go back and read it i am like what? LOL…have a wonderful week…enjoy grilling out for Valentine’s Day!

    1. Thanks Angela. I cooked a lot with qunioa about 2 years ago and then I OD’d on it and now I’m back into it. I only used it in cold salads and such before and it got kind of boring. It tastes much better when it’s served warm like in the quinoa patties or cereal. I love that you’ve made the same blogging puns. I was crazy about getting posts out in the begging of my blog, so I wan’t as thorough and detailed as I am now. Have a great V-day as well 🙂

  2. Eli is so hilarious! I think with that sense of humor, even as a teenager he will look back and snicker at it. Eli, if you’re reading this as a teenager years later wondering what possessed you to let your mom post this, just know how many people you made smile with this picture. You’re adorable! 🙂

    Your story about the pasta recipe is great. I look back at some of my older posts too wondering, what was I thinking? It’s nice to see though that we have evolved and grown though from those early days. 🙂 That recipe looks delicious, I think its sort of sexy and would be a great one for Valentines day. Another one for me to pin!

    We are spending Valentines day together as a family too. I love what you said, because you all LOVE each other. Hello, best place to spend valentines right there! Rick and I had our valentines out together and I’ll be making dinner and I’ll also be making cupcakes. It will be a nice evening, and then I head out to Mexico with my sisters! Looking forward to that.

    1. Hey Sharon B! B-Dog! Just being silly here! You just bring out the silly in me girlfriend! I read your comment to Eli this morning and he had a huge smile across his face. He also told me that he will never be embarrassed to be around me and to be on the blog when he’s a teenager. I’m going to hold him to that promise 🙂 He’s also happy that he brought a smile to your face.
      Love that you think that pasta is sexy, I guess it kind of is. Maybe because there’s vodka in the title. With a little vodka, you never know what will happen 🙂 Just kidding…

        OMG, that is so funny about the vodka in the pasta! Yes, I think that’s why I think it’s a good one for valentines day. Seriously, I am chuckling throughout this entire reply of yours. 🙂
        I love girls trips, but I do admit to being really happy to get home to my boys too. I tend to scope out places that I’m at with my girlfriends and think whether Rick and Jake would like it or not too. I will definitely take pictures and probably write a little post. My mom said, “take a pretty picture of all 3 of you, not all those silly ones you guy take!” ha! She knows us well.
