Here’s the perfect summer s’more for those hot summer nights. These s’mores are a twist from the traditional s’mores because the chocolate is on the outside and they’re frozen. Yes, they’re frozen, am I tempting you yet? The best part is that they can be made year round, as they are cooked under a broiler instead of roasted over a campfire. So for those of you that don’t have a backyard fire pit, you’re in luck.

These s’mores can be made up in your kitchen and ready in under 30 minutes (they take 5 minutes to assemble, the freezing time is the longest part).  How awesome is that? It’s the perfect after dinner, no fuss summer (or anytime of year) dessert.  You can eat them as is, or break them into smaller bite-sized pieces and top them on your favorite ice cream.  Your friends will be impressed when you pull out these bad boys for dessert, because they’re a pretty unique twist on the old fashioned s’more. I will warn you that these are super addicting and you can’t just stop at one piece, you will find yourself breaking off another piece and then another, until you just have to walk away and commit to being done.  Life is about moderation folks, so it’s ok to have a sweet here and there.

This recipe is great because you can make as little or as much as you want. Each graham cracker uses 1-ounce of chocolate for the topping, so if you’re feeding a crowd and want to make up 10 of these, then you will need 10-ounces of chocolate, and if you just want to make up one, then you will just need 1-ounce of chocolate. Easy right?  The other great thing is that is a kid friendly making sort of dessert. Your kids will love topping the graham crackers with the marshmallows and then watching them brown under the broiler and then slathering them with the melted chocolate. They also get to lick the spatula and sample some marshmallows in the process! It’s truly almost as good as making s’mores around the campfire.

makes 6 s’mores (3 large graham crackers)

  • 6 graham crackers (honey or plain)
  • marshmallows, mini or large
  • 3-ounces of bittersweet chocolate chips  – basically 1-ounce of chocolate per graham cracker

Pre-heat your broiler and adjust your oven rack so it’s near the top. I always place my oven rack on the 2nd notch from the top when broiling.

  Get out a smaller sized baking sheet (one that can fit in your freezer) and line it with some parchment paper. The parchment paper will make for an easier clean up.

Place 3 graham crackers on top of the parchment paper and top each graham cracker with marshmallows, make sure that you cover the whole graham cracker.

Place baking sheet under the broiler. Broil marshmallows until they brown up. Stay close to your oven, as this will be a fast process. Pull out the browned marshmallows.

Immediately put the other 3 graham crackers on top of the marshmallows, and push down so that the marshmallows adhere to the graham cracker. You’re basically making a s’more sandwich here.

Measure out 3 ounces of chocolate chips. I used my kitchen scale, but if  you don’t have a kitchen scale then just eye ball it. It really doesn’t have to be exact, as the chocolate is just going to cover the top of the graham crackers. If you measure out too little, then you can always heat up more chocolate, right?

Put the chocolate chips into a microwavable cup or ramekin.

Place the chocolate chips into the microwave for 30 seconds. Take out the chocolate and give it a stir with a spatula. You can also melt the chocolate chips in a double boiler over a pan of simmering water.

Put the semi-melted chocolate back in for 20 seconds more and then give it one final stir. The chocolate should be melted at this point. If it’s not entirely melted, then just put it back in for 10 more seconds.

Take your melted chocolate and pour a bit on top each graham cracker.  Take a spatula and spread out the chocolate to form a thin layer (it’s like frosting a cake).  Make sure to drizzle some chocolate onto the sides of the graham crackers, as well as onto the melted marshmallows.

Aren’t those grahams gorgeous? I could just eat them now, but they would be a bit messy for my taste. Don’t worry, they don’t take long to freeze up.

Stick the tray with the graham crackers into the freezer for a minimum of 15 minutes, or until the chocolate hardens.

Use a knife and cut the grahams into any size that you want.  Eat them as is, or feel free to break them into smaller bite-sized pieces and top them on some vanilla ice cream.

Store any leftovers in the freezer in a freezer bag, or glass container.

    Ingredients

        1. Hi Reba! I use a nikon D5000, but it’s the lens that really makes the difference. I use a Nikkor 50mm 1.4 lens. It’s not a zoom lens, so when you want to move closer to the object that you’re photographing, you have to physically move closer. It lets in more light, so you can take better pictures in lower light situations. I love it and have been using it for the past year now and I have definitely seen an improvement in my photos. It’s a bit pricy, but worth the investment over time.
          No, I have not tried this with fluff. Give it a try and let me know how it turns out. 🙂

        1. Hi Linda! Yes, these are definitely a kid and crowd pleaser. That baking sheet is more of my staging pan and not my everyday cooking sheet. I just use it because it’s got a weathered look to it. It’s clean, but shows years of love and heavy use. I hope you enjoy these 🙂

      8. Oh my yumminess! These look so good and great for summer. I think I would like these better than regular s’mores! I totally agree with you about moderation and having a sweet every once in awhile. I totally indulged on our vacation with sweets every day (yes, every day, that is so not moderate!) so I am pulling it back this week and trying to eat healthy for the next couple weeks.
