Happy Father’s Day to all you dads out there. I want to say a special Happy Father’s Day to my amazing husband John, my dad Papa Bear, along with my stepfather Bill and my father-in-law Bill. You’re all amazing dads and I love you all so much! I mean I wouldn’t be where I am today or the person I am without each and every one of you in my lives!

I adore this above photo of Zoe and Eli holding Trixie, as it’s pure love. We did some dog sitting the first week of summer while Trixie’s family was away, and I have to say that this little cutie grew on us, and grew on us so much that we didn’t want to give her back. She was just the most lovable and sweet little puppy. It made me consider the possibility of getting a dog in the near future!

The last two weeks have been huge baseball weeks for Eli. Eli had his 4th tournament game on Wednesday, and they won!  They were super excited of course, because they won, but even more excited because they got to play the championship game at Joe Wagner field (which is the field where the bigger kids play and they have an announcer and everything). So they played their championship game last night, and guess what?  THEY WON!  Yes, you heard me right, they won the championship for their league’s division. It was a super close and nail biting game though, and both teams did a great job.  When the game was over and that last out was made, you didn’t see a happier bunch of parents and kids. We all ran out to the stadium and hugged each and every one of those kids. I actually think the parents were more excited than the kids to be honest.  Eli’s team had such an amazing coach.  Frank was so supportive of each player and focused on their strengths rather than their weaknesses, and he had the respect of each and every boy. I can honestly say that the boys had a great season, not just because they won, but because they had fun at each game whether they won or lost and they played together  as a team, fully supporting their teammates no matter what.  That’s truly what a team does, and I hope these boys continue to play with that sportsmanship and playful spirit their whole lives. Here’s Eli with two of his buddies holding their trophies.  I tried to get a team photo of all of the boys, but my phone ran out of batteries right as I was shooting this pic, so sadly, this is all I got.

So, did you all check out the video tutorial that Zoe and I put together?  It was my first speaking video, and I was nervous to put it out there, but I received so many positive comments and emails from you all that I gained the confidence to start working on more. I’m actually putting together a video showing people how to juice without a juicer. So many friends commented that it was easier to make the kale salad after seeing my video, so I thought juicing without a juicer would be a great one, as it’s hard to show the steps in pictures.

I made my favorite kale and spinach smoothie.  If you haven’t tried this yet, make it, it’s super easy and tasty!

I made up this super easy and quick dessert of frozen s’mores. We threw them on top of some ice-cream and it was super good and easy to boot. I’m going to tweak a few things and possibly make them so that the bottom is covered in chocolate as well, think chocolate covered graham crackers.  Yum!

It was cool and foggy on Sunday so we decided to do some recipe testing. We made another batch of peanut butter cups, but this time we made them in a mini muffin tin with 70% dark chocolate and different fillings.  We realized a few things, that we like them made in the larger muffin tins, we prefer bittersweet chocolate over dark chocolate and we now know what fillings we like best. I will show our favorites when I post the recipe.

Lastly, I made this beet, carrot, apple, lemon and ginger juice yesterday.  I took it with me to Eli’s game last night and Zoe and John kept calling it vamp-juice, because it was blood red.  It was super good and had a kick of spice to it due to the ginger.  Yum!

So let’s move onto this week’s menu:

Sunday night dinner

Buffalo apple burgers with sage jalapeño pesto and a carrot ginger salad. I made these burgers last Sunday, as it was too cold for shrimp tacos and we were craving something warm and comforting. These burgers were moist and the sage pesto was so delish!  John requested these again for his Father’s day dinner. Both of these recipes are new and will be posted soon. I’m going to try and post the burger recipe this week.

Monday night dinner

Spaghetti with cheesy broiled tomatoes and basil and lacinato kale salad. This is an easy Monday night meatless dinner and heirlooms are on sale at Whole Foods right now!  Yippee!  I can’t wait for them to get a bit riper, so I can make my heirloom tomato soup.

Tuesday night dinner

Buttermilk roasted chicken and kid friendly caesar salad.  I love this chicken dish, because you just throw a few ingredients together to marinate with the chicken all day, and then just pop it in the oven come dinner time. Easy peasy!

Leftover night!  I’m using the leftover buttermilk chicken and throwing it over some caesar salad.  I will serve up some warmed naan bread as well.

We’re having Eli’s end of the season baseball party tonight, so I have the night off from the kitchen. Love that!

Friday night dinner

Sausage and arugula skillet pizza and kale and ricotta salata salad.  Since we are eating out on Thursday, I thought I would cook us up some pizza.

    and my gosh what a fun idea to try so many different flavors with pb cups…i should put that on my summer fun do list when it is a rain day 🙂 and jackie I really don’t know how long I can wait for the frozen smores treat…i love smores and it is getting hot here in WI so they will be perfect.     1. Hi Reba. My kid’s haven’t always loved kale, but I kept putting it on their plate and then one day, they loved it. Whenever I make the kale salad with ricotta salata, Eli gives me a cheer! He loves that salad. 🙂
