Yep, that was our dinner last night and it was AMAZING and some of the best chicken I’ve ever had (well, one of my faves at least).  I’m totally posting the recipe for you all this week. The green bean salad was a hit as well, and Eli said it reminded him of a minty limeade as he gobbled it up.  Ok, if Eli thinks that a green bean salad tastes as good as a minty limeade then I guess I’m doing my job right.  I will be sure to post the green bean salad recipe soon as well.

Last weekend we attended a friend’s Bar Mitzvah.  We’ve been to a few Bar and Bat Mitzvahs, but we always forget to get a photo of the kids all spruced up, so I made sure to take a few quick ones before we left the house. The kids were both beaming because to them the reception is a party filled with friends, dancing and great food. These parties always have the best DJ’s, complete with fly girls that run around teaching the kids dance moves and getting the crowd going. You really don’t see the kids the whole night because they’re on the dance floor having a blast dancing with their peeps and playing games. Actually, I admit that most of us parents are out there dancing the whole time as well. We’re getting down and dancing to the latest top 40 hits that we all know so well from driving all those carpools.

I think Eli has found his calling, or at least a great way to make a living through college. He gave the DJ a run for his money, as he was on stage the whole night, waving his pom poms around, dancing up a storm and getting the crowd going.  He even bypassed dessert because he was not giving up that stage. He’s a natural dancer and has great rhythm. I tried to take a couple of videos of him dancing, but I hit the record button wrong on my phone and actually ended up recording the floor instead of Eli.

Zoe and Eli both attended the Marin Humane Society summer camp this past week.  Zoe and her friend Madelaine were camp counselors and Eli was a camper.  Zoe has been attending this camp every summer since she was 5, and she just started counseling last summer.  She absolutely loves animals and this camp fills her up.  At the camp you learn about all types of animals and pets, and how to take care of them.  You also get insight into how the shelter works and you get daily visits from the animals in the shelter.  The kids get to play and interact with kittens, cats, dogs, bunnies, guinea pigs and birds.  Everyday a special dog guest visits the camp.  The kids get to meet police dogs, dogs that have special skills and they even get to see dogs run an agility course.  This was Eli’s first year and he loved it. He also loved that he had a guy counselor and that there were some boys in his group.   He was a bit worried at first that he was going to be the only boy at the camp.  If your kids are interested in the camp for next year, you need make sure to sign up between March 1st and March 29th. I would highly recommend this camp if your child loves animals.

Ok, let’s move onto this week’s menu:

Sunday night dinner

Favorite turkey burgers, corn on the cob and onion rings.  Yes, you see these burgers a lot on the blog, but the name, favorite turkey burgers, speaks for itself. These are one of our favorite burgers, so they’re made a lot!  This dinner is total summer comfort food.  I’m so loving corn on the cob right now, it’s just so fresh and the easiest summer vegetable to whip up.  The way I cook up my corn on the cob is simple.  I just bring a large pan of water (enough to cover the corn) to a boil and then throw in the corn for exactly 3 minutes. The corn tastes perfect and you don’t need to add any salt or butter to it!  Oh, and I’m making up a batch of our favorite brownies tonight as well.  It’s a night of favorites in Marin mama’s house!

Monday night dinner

Ina’s summer garden pasta and crispy garlic bread.  Have you made this pasta yet?  You have to if you haven’t.  It’s the perfect make-ahead pasta and gets better as it sits and marinates all day.  Grape and cherry tomatoes are on sale everywhere right now (well, at least in my neck of the woods) and they’re so full of flavor.  Did you know that the smaller and darker the tomato is, the more cancer fighting lycopene it has?  That gives me more reason to want to make and eat this pasta.

Leftover night!  Ina’s summer garden pasta and kid friendly caesar salad.  I’m going to use the rest of the loaf from last night’s garlic bread to make up some croutons for the salad.

Cilantro lime chicken tacos with mango avocado salsa, grilled zucchini and my favorite green dip of avocado, tahini, lemon and cilantro (recipe soon) with some have’a tortilla chips. This is another family favorite summer recipe. I’m also making up our favorite summer drink, minty limeade.

Thursday night dinner

Leftover night!  I’m making quesadillas with the leftover chicken. I just top them with a fresh batch of mango avocado salsa and some sour cream. The kids love and devour these quesadillas.  I will serve these up with some lacinato kale salad  (come on, you didn’t think I would go a week without my favorite salad).

  1. Okay, I can totally picture Eli on the dance floor just as you describe, that is so fun! The kids look wonderful and I love that Zoe loves the animal camp and goes back each year. It must have been so fun for her to see the counselor side of things. She’s a natural as a camp counselor!

    1. Hi Averie. She would love to be 6 feet tall. All she talks about is being taller than my 5’4″ frame. I hope she does grow to be taller than me 🙂
