Happy Mothers Day to all you moms out there!  I took this above picture on my run a few weeks ago because I was feeling loved, and just felt like drawing a heart in the dirt to express that feeling and symbolize the moment!  Running makes me feel like that, it makes me feel alive, free, full of appreciation for life and love!  I’m especially feeling the love today because it’s Mothers Day, and I’m grateful to be a mom to two of the most amazing kids in the world.  So today I’m celebrating them, and celebrating us.

So you may have all noticed that I have a new photo on the side bar!  I recently had some head shots taken for work, as we’re going to do a press release announcing my role at Paradise Foods, as well as our catering division. I loved how the photos turned out, so I decided it was a good time to freshen up my blog photo, as well as all of my social media photos. I want to give a shout out to my photographer, Jennifer Skinner, because she was absolutely amazing and made me feel totally at ease in front of the camera.  She’s a total pro and I would highly recommend her to anyone. I mean I can make food look great, but Jennifer can make people look amazing, and I think people are much harder to photograph than food.

So our catering business is growing and I’m seriously working 7 days a week, but you know what, it’s ok, because I LOVE my job!  I never thought I would love getting up and going to work again, but I really enjoy it. We recently catered a garden party and it was such a beautiful event, and the food was amazing I must say.  Here’s a photo of Scott, our cheesemonger setting up for the party.  This is why I love my job, I get to work with some of the best people who make me laugh and make going to work fun!

I mean take a look at that gorgeous cheese table that Scott set up.  It’s a work of art, and you all know how much I love cheese, so I made sure to sneak over to that table quite a few times during the evening.

Here’s some of the appetizers that we passed around.  These were amazing!

So, let’s move away from catering and talk about one of my favorite meals of the day, breakfast!  Breakfast is seriously my favorite meal of the day!  I get up at 5:00, warm up some oats or quinoa flakes, brew up some coffee and hit the den for some journal time while I chow down my cereal. Now that fresh berries are in season, I’ve totally been fueling up on both of these morning faves. On the weekend’s I make up a batch of my easy overnight steel-cut oats.  I love topping them with my favorite peanut butter from MaraNatha, raspberries, blueberries and sunflower seeds.  Super yum, and this breakfast helps me to power through my runs.

This 5-minute hot quinoa cereal is my weekday morning staple.  I also top this with some peanut butter, goji berries and fresh berries.  The peanut butter gets all melty, and it’s so amazing. If you haven’t tried either one of these quick breakfast fixes, you must. I guarantee you will love them, and it will change-up your breakfast routine!

Ok, so let’s move onto this week’s menu!

Sunday night dinner

Favorite Turkey Burgers, kale salad with ricotta salata and Robert’s absolute best brownies.  The kids are I are heading over to my friend Yvonne’s house after Eli’s baseball game for some pool time and dinner!  I can’t wait to sit back with a glass of wine, chat with my best friends and take in the view of Mt. Tam.  I’m bringing over our favorite brownies, a bottle of wine and the cilantro-lime mayo, and Yvonne is making up the salad and burgers.  It’s a team effort here.

Monday night dinner

Pasta with kale, lemon and toasted walnuts.  This is a super simple, healthy and total kid approved weeknight pasta.   I’ve been making the whole-wheat version for the kids lately, and they love it, which is a bonus!  I love this dinner because it can be made in under 30 minutes and is a one-bowl meal to boot!  This is also a two-nighter dinner since there is just three of us, which makes my life so much easier.  We will be having the leftovers of this pasta tomorrow night.

Tuesday night dinner

Leftover night!  I may add some roasted asparagus and garlic bread  just to add some variety for the kids!

Wednesday night dinner

Citrus marinated chickenpopovers and roasted asparagus. The kids have been begging for this chicken for weeks, so I’m making it up tonight special for them!  Popovers, I mean come on, they are one of our favorite things in the world and get made weekly in this house. I always make sure to have a small container of whole-milk in the fridge for those popover cravings.  This is a total kid approved dinner!

Asparagus and gruyere cheese pizza and lacinato kale salad.  Who says pizza night is just for Fridays!  We’re breaking that rule and serving it up tonight. I always buy a huge batch of asparagus, so I’m just going to use the extra asparagus for this pizza.  Easy peasy!

    Looking at the picture of the appetizers reminded me that I really fall down in that area. Would love a few recipes that I could serve with drinks before dinner. And as usual that are yummy and not too difficult to pull off!
