It’s official, I have a high schooler now!   Zoe had her 8th grade graduation this past Thursday and there was not a dry eye in the house.  Seeing all of these kids that I’ve known since kindergarten walk down the aisle one by one to take their seats, blew me away.  They all looked all so grown up in their suits and dresses that I was in awe.  When did this happen?  When did my little pumpkin grow up into this beautiful girl I see today.  It seems like yesterday when she was toddling around the house.  It goes by so fast, so for those of you that have little ones, savor these days and just know that in a blink of an eye, they will be all grown up.  I’m absolutely loving watching her grow and each stage is amazing, but I do wish that time went just a bit slower.

I want to say a huge CONGRATULATIONS TO ZOE, as she was one of the 18 salutatorians in her class.  She is one smart girl and she’s so dedicated to school and all of her activities.  I’m super proud of her, not just for her academic accomplishments, but for the young lady she is growing into. I took this below photo of Zoe and her friends right after the ceremony, and I simply adore it because her spirit is shining through in this photo and she’s so full of happiness and hope!  Gosh I love her!

We can’t forget about little Eli!  Eli had a hugely successful baseball season. His team was undefeated and made it to the Tournament of Champions (which is pretty big deal).  As you can see from the photo below, the boys and coaches are elated!

So it’s summer and that means the kid’s schedules will be slowing down a bit, which I welcome with open arms.  I will have more time to cook and thus make some new recipes for the blog.  Yippee!  The kids and I will have more time to just decompress and play, and that I look forward to the most. Work is not slowing down for me though, so I’m still focusing on simple and healthy weeknight dinners.

Sunday night dinner

Citrus marinated chicken, popoverskid friendly caesar salad and frozen s’mores. This is one of my kid’s favorite dinners, and if I made this weekly, they would be happy campers.  I’m going to grill up a huge batch of the chicken tonight instead of broiling it, and make 2 batches of popovers, so we can have leftovers tomorrow night.

Monday night dinner

Leftover night!  Kid friendly caesar salad topped with leftover citrus marinated chicken and popovers.  Gotta love leftover nights!

Tuesday night dinner

Paul McCartney’s refried bean tacos and roasted asparagus.  Let’s give a cheeer for taco Tuesday.  We absolutely love these tacos and they’re super simple to whip up, as they can be made in under 20 minutes!  Perfect meatless weeknight dinner!

Wednesday night dinner

Ina’s summer garden pasta, lacinato kale salad,  crispy & easy garlic bread and peanut butter and chocolate rice crispy bars! I love this dinner because it’s a make ahead weeknight dinner!  I make the kale salad, garlic butter and tomato marinade in the morning, and let the tomato marinade sit out at room temperature all day.  All I have to do come dinner time, is heat up the angel hair pasta and garlic bread.  It’s the perfect summer-time weeknight meal, and my kids love it!  It’s also a two-nighter meal, which I love.

Yet another leftover night, seriously, you gotta leftover nights!  We’re having the leftovers of the summer pasta, kale salad and I’m going to whip up a fresh batch of garlic bread!

    Your daughter is so beautiful…your clone! Congratulations to both of your kids…you have every right to brag a bit!
    I just have to tell you that your quinoa patties are such a hit with my grandkids..they have been a staple in my house lately. And my husband, who is a pasta/carnivore man, loves them..sometimes cold for breakfast!!
    And my grandkids were asking for the frozen s’mores that I made last summer so
    it’s nice to be reminded where they came from!

    1. Hi Gloria! Thanks so much for the kind words regarding Zoe. I look at her sometimes, and I’m amazed at how grown up and beautiful she is. We can share clothes now which is so strange to me, but fun! I’m so glad the quinoa patties are such a hit in your house and espically with your grandkids. 🙂 I love those patties as well and you’re reminding me that I need to make them again soon. I forget all of the recipes on my blog.

Enjoy your summer with your kids, i do love summer time and even though you are now working, it does seem like you have more time to do things because the kids schedule is more relaxed and its lighter outside for longer.
