My main focus on this blog is to inspire you all to get in the kitchen and cook for yourselves more. I want to take the intimidation away from making breakfast, lunch or dinner, by showing you simple whole food recipes that you can whip up on a moments notice, but recipes that taste like you ordered them from your favorite cafe. Good food doesn’t have to be labor intensive, or complicated to taste good. Some recipes, like this avocado toast, are so simple and easy that it feels strange to even write a recipe for them.

Avocado toast is the BOMB, and one of the simplest and tastiest ways to dress up a slice of toast. I mean it’s literally toasted bread with an avocado smashed on it, you can’t get any simpler than that. Topping plain-jane toast with smashed avocado adds such a rich, silky, creamy texture and flavor, and it’s so versatile, as it works for breakfast, lunch or dinner. I mean you could literally have avocado toast for breakfast, lunch and then dinner, but I think that might be going a bit overboard. 

For breakfast, top avocado toast with a fried, scrambled or hard boiled egg, or add some bacon!

For lunch or dinner, you can top it with just about anything from tomatoes, (love, love using heirlooms) eggs, salad, cucumber, radishes, beets to fruit!  Avocados are so mild in flavor, and creamy in texture that they make the perfect base, and pair with just about anything! I top my avocado toast with my favorite kale salad all the time, and it’s literally the bomb!

I also adore a good bacon, avocado and heirloom tomato (BAT) sandwich! It’s my one of favorite summer treats!

So today I’m showing you 2 simple ways that will turn your plain-jane avocado toast into gourmet toast!

The first recipe is a classic – avocado, arugula, hard boiled egg (you can use a friend egg as well) and sea salt.  It’s one of my favorite lunch time treats. I seriously feel like I’m eating at a gourmet cafe when I make up this concoction.

The second recipe my friend Jane introduced me to, and she got the idea from when she worked at Nopa in SF. It’s avocado toast topped with kumquats. What the heck are kumquats you ask? Kumquats are these cute tiny little citrus fruits that you can just pop in your mouth and eat whole. They have a sweet skin and tart flesh. They’re the perfect balance of sweet and sour, so if you’re a fan of sweet and sour combinations, then you will love these cute little guys!

Avocado toast 2 ways:

serves 1

the base:

  • 1 piece crusty artisan bread – I also love using Dave’s Killer bread when I don’t have a fancy loaf of bread around
  • extra virgin olive oil
  • 1/2 ripe avocado
  • coarse sea salt – I love this celtic sea salt from Selina Naturals, as it’s un-refined and is loaded with essential minerals our bodies need. It’s on sale for $2.99 at Whole Foods right now peeps!

Lightly brush both sides of bread with olive oil. Turn on the broiler.

Put the prepared bread on a parchment lined cookie or baking sheet, place it under the broiler, and toast both sides of the bread.

Toss arugula with a bit of olive oil.  You can skip the arugula if making the kumquat version.

Using a spoon, scoop out the avocado onto the bread.

Take a fork and smash the avocado onto the bread, making sure to cover all of the bread.

Top the avocado with the arugula, sliced egg and a bit of coarse sea salt for the arugula and hard boiled egg version!

Top the avocado with the sliced kumquat, a bit of coarse sea salt and a drizzle of olive oil for the kumquat version.  You can even add a bit of parmesan or goat cheese to this version.

  Super easy, tasty and delicious! Eat the toast alone, or pair it with a salad or soup.

    Here's 2 simple recipes that will turn your plain-jane avocado toast into gourmet toast!

    Ingredients

    • The Base:

    • Small handful of arugula, or baby kale

    • Hard boiled egg, peeled and thinly sliced - see my post on how to hard boil eggs - you can also use a fried egg instead of a hard boiled egg

    • Avocado Toast with Kumquat:
    • 1-2 kumquats - thinly sliced and de-seeded

    Directions

    • Lightly brush both sides of bread with olive oil. Turn on the broiler.
