Hey, it’s Monday and Monday’s are not the easiest for anyone. It’s the one day of the week where we’re all a bit like zombies and can’t seem to get our acts together, or our feet on the ground. Monday’s should be fun, because it’s the start of a new week, a new day, so, I’ve decided to change your Monday around and post a fun treat and create a bit of magic for you all. We’ve eaten at Super Duper and Picco pizzeria quite a few times this summer and every time we go there the kids get the soft serve Strauss ice cream dipped in chocolate, which is basically magic shell. You all remember magic shell right? It’s the chocolate stuff that instantly hardens when poured over ice cream. It’s pretty awesome, and not only loved by the kids, but loved by me as well!
Well, I’ve figured out how to make a homemade version that’s way healthier than the squeeze bottle variety, and takes literally 5 minutes to make. All you need is dark chocolate, virgin coconut oil, and of course some ice-cream to slather it over. I mean it’s the ice cream that creates the magic.
This is a great dessert to make up for sleepovers, or cozy fall nights. Kids and adults will love the magic of magic shell! So, let’s create some magic…
2 ingredient dark chocolate magic shell:
makes 3/4 cup of magic shell
- 2 tablespoons virgin coconut oil
- 7 oz bittersweet chocolate chips – roughly 1 1/4 cups chocolate chips
Place the chocolate chips into a heatproof bowl set over a pan of simmering water. Melt the chocolate chips stirring frequently with a silicone spatula to prevent burning.
Stir in the coconut oil and heat until dissolved, about 1 minute. Turn off the heat.
Using a small ladle or spoon, pour the chocolate over an ice cream cone, or bowl of ice cream.
The chocolate will harden into a shell within a few seconds.
It’s MAGIC!
Got leftovers? Store chocolate in the refrigerator in a glass container. Reheat chocolate in a small pan over low heat via the stovetop, or in a small bowl via the microwave.
See, I told you it was super easy to whip up. Here’s an old photo I found of the kids the first time I made magic shell. This photo was taken back in 2012, so Zoe and her friend Madelaine were just 12, and Eli was 7. I can’t believe how little and cute they were. WOW!
