Kale and spinach smoothie

For those of you that want an on-the-go vitamin packed smoothie, here’s my favorite. This kale spinach smoothie is my go-to smoothie. I always feel great after drinking this smoothie because I know that I got 2 cups of spinach and 3 kale leaves in one drink.  It’s nice to be able to drink your veggies once in a while, especially when life is busy and you don’t have time to cook them up in the kitchen.

Green smoothies are great to have as a mid-morning or post workout snack, or as an on-the-go lunch or breakfast.  I usually need a bit more than a smoothie for lunch, so I usually pair this smoothie with a slice of toast topped with almond butter or mashed avocado and sea salt. DELISH!

Ingredients for kale and spinach smoothie

Kale & Spinach Smoothie!

  • 3/4 cup cold filtered water or coconut water
  • 1 cup organic grapes
  • 1/2 cup frozen or fresh pineapple – if you’re using fresh, then you will want to add some ice cubes till you get to the desired consistency
  • 2 cups of spinach – I really pack it in, so its 2 full cups
  • 1/2 banana, fresh or frozen
  • 2-3 leaves lacinato kale – rinsed and de-stemed.  Here’s a post on how to de-stem kale.
  • OPTIONAL – 2 tablespoons of flaxseed – it’s optional, but why not add more nutrients to your smoothie!
  • OPTIONAL – 1 tablespoon collagen powder

Here’s the BEST blender in the world, Vitamix!  This seriously has been one of my favorite kitchen investments!  It is pricey, around $500, but you can mix anything in it from smoothies to soups.  I’m totally getting my money’s worth as I am making a smoothie every day for myself and most days for my hubby and kiddos!  The below picture is what the smoothie looks like before its blended.

Put all of the ingredients into a high-powered blender!

Pour the smoothie into a cute glass, add a straw, and enjoy!

It makes about 18 ounces so feel free to cut the recipe in half if you want less.

I usually take it on- the-go in my Lifefactory bottle. If your smoothie is too thick, then just add a bit more water to thin it up a bit.

Don’t have kale in the house?  Then make this spinach smoothie. It’s just as good and is one of my kid’s favorite smoothies.

    Ingredients

    • Put all of the ingredients into a high powdered blender and blend away until smooth!

    • Pour into a glass, add a cute straw and drink up!

    Tip

    • If your smoothie is too thick, then just add a bit more water to thin it up a bit.

    1. I tried this smoothie with a bit of hesitation. I was nervous how kale and spinach would blend with fruit. I should not have hesitated. This smoothie rocks!

    2. FINALLY tried this yesterday…how long have been telling us about this…a while! Anyway, so much better than I expected. I’m definitely adding the kale next time.

    3. Tip: As grapes go out of season, stock up when you can and freeze them. I washed them, let the water drain off some, and used a Zip-Loc freezer bag. Now I can treat myself to a refreshing smoothie come December.

    4. We too love our Vitamix and use it almost every day. But we got ours at Costco for about $150 less than normal. (I think $374) Right now they only offer a pricier package, but I just wanted to let everyone know that if they do want to buy one, to check out Costco. 🙂 And that smoothie looks delish!

    5. I JUST HAPPEN TO HAVE EVERY SINGLE ONE OF THE ABOVE INGREDIENTS…EVEN COCONUT WATER! I had a strawberry smoothie this morning but I am making myself a Kale and Spinach one in the morning! SO excited! I wanted to ask though, what you do with the left over? store in fridge or freezer?

      1. Hey Tracey! Yaay! Don’t you just love it when you see a recipe and you don’t have to run out to the store? I love that! Ok, I never have leftovers as I drink the whole smoothie. Yes, I’m a piggy, but it really goes down quickly. If you don’t want all 18 ounces, then you can half the recipe or store the leftovers in the fridge. The only thing is that the smoothie will get a bit thicker as it sits, so you may want to throw it back in the blender before you drink it up again. Let me know what you think! xoxo, Jackie
