I’m celebrating this week with a slice of that big cookie above! Yep, I made a 12-inch skillet chocolate chip cookie from my FAVORITE cookie recipe. It was so good that I made it again last night for some friends that we had over for dinner. That slice in the above photo was Eli’s after school snack on Thursday (he was patiently waiting as I took a few quick snapshots). I know it wasn’t the healthiest snack, but it sure was the tastiest. I posted a photo of the cookie on Instagram asking Zoe if she wanted a slice, and within 2 minutes I got a text from her saying YES! So Eli and I raced over to her school (she had to stay after for her saxophone lesson) and dropped her and her friend Madeline off a huge slice. They were very happy campers! I will be sure to post the recipe this week!
Guess whose celebrating a birthday this week? HAPPY BIRTHDAY JOHN! I can’t believe that he’s turning 36 again, (wink,wink). Seriously, I love this guy and he is the rock that holds me together. He is my protector, my best friend and the most loyal and calm guy.
He also has a super hilarious side that not everyone gets to see. We always tell him that he could have his own sitcom, because he’s that funny and witty. The kids and I are always cracking up at him. I mean look at him in the below photo, he just does random stuff like this all the time.
He brings laughter to my life on daily basis, and I just love that about him. Happy Birthday sweetie! I’ll rollerblade with you anywhere.
Any Arrested Development fans in the house? We just started watching the series about a month ago and we are hooked! It’s seriously one of the funniest shows since Seinfeld. It actually reminds me of a bit of Seinfeld since it’s so random. Anyway, season 4 starts tonight via Netflix, and I can’t wait. We’re not actually going to watch the new episode yet, as we have to finish up season 3. I can’t wait to see what Buster and the gang are up to this season. If you’re a fan of the show, then you have to check out this wordless recipe post from Eat the Love on how to make frozen bananas (it’s a parody on Arrested Development). It’s pure genius and you’ll want to read it a few time to absorb all of the hidden jokes and humor. LOVE IT! Ok, if you’re not watching the series, then you need to start! They say that laughter is the best medicine and extends your life, so watch the show and live a bit longer.
Zoe’s jazz band played Monday night at the Giant’s game (Zoe’s at the end down on the right). They did an amazing job and had a great time. The funniest thing was that one of the boys put a tip jar out, and the kids actually made some money, enough to buy a bunch of donuts the next day to share at band practice. Those kids are honestly the cutest!
Eli was happy to tag along because he got a new Giant’s sweatshirt, and he looks great in it, I must say.

Sunday night dinner
There’s no school or work tomorrow, (yippee) so it’s like a Saturday night to us which means no cooking! We’re biking over to DJ’s tonight to meet our friends, the Fishers!
Monday night dinner
One pan pasta with crispy garlic bread and kid friendly caesar salad. We attempting to make this pasta again. We tried making it Friday night before heading out to see Star Trek, but I think I over cooked it, so wish me luck. The pasta had great flavor, was creamy and super easy to throw together, so I want to give it one more shot. I will post it if we can get it to work, if not, then this is the last photo that you will see of it!
Tuesday night dinner
Today is John’s Birthday! Yippee! We’re not doing the official dinner celebration tonight, as Zoe has her advanced band concert. I’m making up a batch of Paul McCartney’s refried bean tacos and some kale and ricotta salata salad. This is a super easy throw together meal for a busy weeknight, and it’s healthy to boot!
Wednesday night dinner
Chicken enchiladas with pumpkin sauce and kid friendly caesar salad. I love these enchiladas because they’re so easy to make and have such great flavor!
Thursday night dinner
Leftover night. Take a look at Wednesday night’s dinner and that’s what we’re having again tonight! I love leftover night!
Friday night dinner
Tonight we’re celebrating John’s birthday dinner! The kids and I are taking him to one of his favorite sushi places, Sushi Ran. I can’t wait as we haven’t been there in years! Instead of cake, John wants my chocolate coconut pie for dessert! Yummo!

Happy Birthday to John this week! Smart man there, requesting your chocolate coconut pie. That pie is yummy! You’re right, he and Rick do have a lot in common, I think they would get along really well! That picture of him with the ?? Shrek head and yoda?? I’m not sure what that is, but it cracks me up!
Okay, we keep finding things about each other that makes me like you even more – our family LOVES Arrested Development. We have also said it’s the funniest thing on TV and no one knew about it! We started watching it a about 4-5 years ago and have watched every episode at least twice. We couldn’t believe when they said it was coming back on since it’s been a few years since the last season. We are going to watch it tonight and I can’t wait!
That one pot pasta concept looks great! I’m looking forward to seeing how it turns out this time. I’ve also been meaning to make the best cookies ever and just haven’t done it yet. It will happen though. 🙂
