I have to say that I am LOVING summer so far (as well as those adorable kiddos above). I’m far more relaxed then I’ve been in months and the kids are as well. I’m not racing around dropping and picking them up from school and all their activities. We’re sleeping in, cooking together, eating lunch and dinner in the back yard, playing board games and guitar hero and  just plain chilling out. Summer is as much as a vacation for adults as it is for kids. Besides just chilling we’ve been busy doing a few other things like….

Playing baseball. Eli won his second playoff game!  Go Giants!  We’re hoping to win the third one this week.

We’ve also been cooking up a storm. I made the minty pea soup and the smoked salmon sandwich that John requested and I have to say, they were both a success.  I will post both recipes soon.

I surprised the kids and whipped up some baked sugar and cinnamon donuts on their first morning of summer vacation, and it was the perfect way to start out their vacation. I will post that recipe soon as well.

I also received my friend Averie’s new cookbook, Peanut Butter Comfort last week.  John came home from work, browsed through it and announced at dinner that he and Zoe were going to make up her peanut butter cups after dinner.  So they did, and they’re were AMAZING and so easy.  We made plain old peanut butter ones, peanut butter and Nutella ones. Next up, we’re going to make  some s’more ones, as well as a healthier version, dark chocolate, almond and unsweetened coconut. The great thing about these chocolate cups is that you can throw anything in them. Thanks Averie!

Ok, let’s move onto this week’s menu.

Sunday night dinner

Chipotle shrimp tacos and lacinato kale salad.  It’s a bit foggy, rainy and cold this morning, so I’m hoping it clears up so we can fire up the grill for these tacos! June is one of our colder summer months, believe it or not.

Asparagus and gruyere cheese pizza and kid friendly caesar salad. Friday pizza night has moved to Monday night, at least for this week.

Tuesday night dinner

Orecchiette pasta with pesto, sausage and green beans.  This is one of those easy, throw together weeknight meals.

Wednesday night dinner

ELi has his baseball game, so we will be grabbing dinner out tonight!  Most likely we will pick up a few burritos to chow down during the game.

Thursday night dinner

Chicken enchiladas with tomatillo salsa and lacinato kale salad. I love these enchiladas. Don’t be intimidated by my recipe, because I give a bit too much detail, they’re super easy to throw together last minute if you shred the chicken and make the salsa ahead of time. I’m going to try making a vegeterian enchilada next!

    I’m excited for your upcoming recipes, especially the soup and donuts!

    I wish I could plan my weekly dinner menu, I think I should definitely try.. I always shy away from it, but it seems like it would make my life much easier.

    1. Thanks Pamela. Trixie has been a fun houseguest to have. Just so you know, my weekly menu is an attempts at what I’m going to eat, it’s not written in stone. Sometimes I follow it to a T and other times, I totally fail! Oh well 🙂

  2. I love this post! I’m so glad your summer is going well. Summer is my favorite season! That picture with Zoe and Trixie is beautiful. Zoe looks so beautiful and grown up in that photo! And Eli, always with that contagious smile. Love all the new recipes coming up, and those baked donuts look amazing! love the napkin / fabric that you have next to it.     1. I have to say that I’m not enjoying our non-summer like weather these past two days. It’s felt like winter down here! We usually travel in June to see my family on the east coast, so I usually escape the June gloom 🙂
      I thought you would love that napkin with all the cute little birds on it. I’m glad to hear that you got to relax a bit yesterday, what an emotional weekend for you with Jake’s graduation and all. Ok, girl! I honestly don’t know why I’m still getting up at 5:30 when it’s summer! Habit, I guess. 🙂

      The PB cup with Nutella and peanut butter is actually Zoe’s new fave. Now I just have to check out your blog and learn to make some homemade Nutella! 🙂

Plus I love when you do it since it gives me reminders of recipes I’ve been wanting to make of yours! That asparagus gruyere cheese pizza oh my goodness that would be perfect for dinner tonight…so craving pizza n asparagus! How fun that your hubby whipped up pb cups from Averie’s cookbook I can’t wait to make something from that…some desert to follow the pizza 😉

I saw your huge batch of asparagus on Instagram, so you should make that pizza up. It’s so easy and light and really a perfect spring-time pizza. Averie’s cookbook is great and I’m so proud of her.
