cilantro-lime mayonnaise

cilantro-lime mayonnaiseI figured this mayonnaise finally deserved a post of its own instead of being hidden in the middle of a burger post.  I make this mayo up way too much and my friends make it up as well and complain about having to scroll through a turkey burger post to get the recipe.  Hey, I get it, it’s easier to just have a designated post for each recipe, right?

This mayonnaise rocks, it’s chock full of flavor and has a bit of a kick to it from the garlic and lime juice.  This is by far our favorite mayonnaise, or should I say condiment, to top on any turkey or chicken burger, chicken panini or sandwich, the list goes on and on.  It so beats out ketchup!  Eli wasn’t a fan of turkey burgers till we topped his with this mayonnaise, and now he begs for turkey burgers with cilantro-lime mayonnaise on them.  I also use this mayo for my roasted red pepper, avocado, tomato and arugula panini.

cilantro-lime mayonnaise:

makes enough for 4-5 burgers

  • 1/2 cup mayonnaise – regular mayo not miracle whip
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons fresh lime juice
  • 2 garlic cloves, minced

cilantro-lime mayonnaise ingredientsLet’s wash up and mince the cilantro.  Cilantro can be dirty and I find the easiest way to clean it is to fill a small bowl with water and take the cilantro by the stems and swish them around in the water.  I empty out and re-fill the bowl with clean water until the cilantro is clean and the water in the bowl is clear.  You can dry the cilantro in a salad spinner or simply wrap it up in a clean flour sack towel or paper towels.

washing cilantroNext, take a knife and scrape the leaves off the stems.  You are still going to have some smaller stems attached, but that’s ok.  You can also just pull the leaves off of the stems as well.  Whatever way is easier for you.

chopping cilantroTake the cilantro leaves and bunch them together and start mincing the leaves, keep bunching the leaves back together until you get them all minced.

minced cilantroIn a small bowl or ramekin, whisk together the 1/2 cup mayonnaise, 1/4 cup minced cilantro, 2 teaspoons lime juice and 2 minced garlic cloves until well combined.

mixing together the cilantro-lime mayonnaiseYep, that’s all there is to it, easy peasy!  You can make up this sauce a day ahead, just be sure to refrigerate it in a sealed container.

The mayonnaise is best day 1 or 2, I wouldn’t recommend using it past day 2.

Ingredients

    This would probably be really good drizzled over fish tacos as well or with a fish sandwich. Looks yummy and I must try!

    Whoops I added two tablespoons (not teaspoons) of lime juice. It still tasted good, but I wondered why it was so limey! 🙂

      Ha! I do that ever so often when I’m cooking, I will be like, “why does it taste different today?” Then I go back through the reicpe and realize I used the wrong measurements. Glad to hear that it still tasted pretty good!

    Could this work with veganaise? I don’t eat mayo but I love everything lime and cilantro.

      Hi Kelli! I know you love this mayonnaise 🙂 I thought it was worthy of its own post and honestly I was tired of always going to and scrolling through a turkey burger recipe just to get it. I also just doubled the recipe for this post since I never used the smaller amount I had originally posted 🙂

    This mayo looks delicious. Do you think it would work well with the kind of mayo made with olive oil?
    Even more importantly, I am so looking forward to your panini recipe!! I do hope you post it soon because my mouth is watering!!

      Hi Christine. You could try it with an olive oil based mayo. I haven’t yet, so I don’t know how it would taste, but I’m sure it would be great. Miracle whip is the only mayo I hesitate on using as it has such a distinct flavor that I don’t think it would pair well with these ingredients. I will post the panini recipe soon. I’m not in love with photo, so that’s what is holding me back a bit! 🙂
