2-ingredient chocolate mousse with coconut sugar whipped creamThis chocolate mousse is one of our favorite desserts, and we actually call this Zoe’s mousse because she’s the one who makes it all of the time. Well, actually Zoe’s the one who originally found this recipe years ago in a William-Sonoma kids cookbook. I first featured this chocolate mousse recipe back in 2012 (wow, so many years ago) in a series I was starting up called, “cooking with kids.” It was a series where Zoe and her peeps would make a kid friendly recipe, take photos and then  write and put the post together. We did 2 posts in the series, one featuring this chocolate mousse and another one featuring, easy 2-ingredient homemade dark magic shell. After that, Zoe got busy with life and school, and the series sort of ended. I would love to bring the series back, because I would love to have more recipes on the blog that kids can make on their own (with parent supervision of course). Here’s a picture of Zoe and Madelaine from the original post. I can’t believe how little they were.

Zoe and Madelaine easy chocolate mousseAnyway, let’s get back to this super easy, super tasty, 2-ingredient chocolate mousse. I’m reposting it because we wanted to experiment and see how it tasted using both bittersweet and dark chocolate, rather than just semi-sweet. I also wanted to try making whipped cream with coconut sugar, to see what the kids would think. It was a super FUN and TASTY experiment, and one the kids did not mind participating in at all.

This mousse is ultra easy to make, as it only requires only 2-ingredients and takes only 10 minutes to make! It’s also a mousse that your kids can make on their own. I mean how proud will your kids be making up dessert one night for the family all by themselves! Kid and mom verdict:  Zoe loved the both the bittersweet and 72% chocolate mousse, as she just loves dark chocolate anything, like her mama!  Eli liked the bittersweet, but thought the 72% was a bit too rich for him.  I loved both the bittersweet and 72%, but of course, I like a darker chocolate as well. We all LOVED the coconut sugar whipped cream and thought it actually tasted bit richer than the normal refined sugar whipped cream. 2-ingredient chocolate mousse with coconut sugar whipped cream

recipe from William-Sonoma The Kids Cookbook

for the mousse:
serves 8

  • 1 1/4 cups or 8 ounces (if using bars) bittersweet, semisweet, or 72% chocolate chips, or bars – If you’ve got little kids, start with semisweet chocolate, if you’ve got older kids go with the bittersweet. My kids love both!
  • 2 cups heavy whipping cream, well chilled

for the whipped cream:
makes 2 cups

  • 1 cup heavy whipping cream
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon vanilla extract

ingredients for 2-ingredient chocolate mousseLet’s start by making the chocolate mousse. Measure out chocolate chips, or if using bars, chop or break apart the bars into small pieces.

Place chips or chopped chocolate into a heatproof bowl.broken chocolate in panSet the bowl over a pan of simmering water, (make sure that the bowl doesn’t touch the water) and melt the chocolate, stirring constantly with a rubber spatula, until melted and smooth.

Immediately remove the chocolate from the heat and set aside to cool while you prep the heavy cream. melted chocolateWhile the chocolate is cooling, pour the heavy whipping cream into the bowl of a standing mixer, or a large bowl if you’re using a hand-held mixer.

Beat the cream on medium speed until the cream has slightly thickened, about 30 seconds.frothy heavy whipping creamAdd the warm melted chocolate to the cream. Make sure to scrape down the sides of the bowl with a rubber spatula so you get all of the chocolate goodness out.

If the mousse makes soft little peaks that flop over slightly, then the mousse is ready. whipped mousseThat’s it, the mousse is ready, pretty easy right?

Get out some cute little glass jars, cups, ramekins or small bowls and using a small spoon, scoop the mousse into the serving glasses. This mousse is rich, so a little goes a long way.

The mousse will be thick, so the best way to get it into the jars is to put some mousse in the serving glass and then bang the glass on the counter, so that the mousse settles down into the glass. Take a paper towel and wipe it around the rim of the glass to clean off any excess mousse. 2-ingredient chocolate mousseCover the mousse with plastic wrap and place in the fridge. Refrigerate mousse for at least two hours before serving.

Chocolate mousse is not complete without whipped cream, right?  You can either purchase some whipped cream or make some of your own. It’s so easy to make homemade whipped cream, so I’m going to give you the recipe below. Just note that the coconut sugar is brown in color, so your whipped cream will not be bright white, but a bit of a creamier white.

Note: Whipped cream is best served fresh, so if you’re just topping 4 to 5 mousses that night, then you may want to cut the recipe in half and make a fresh batch the next day.

Beat the cream in a large bowl with an electric mixer at medium speed until it becomes frothy, about 15 seconds.frothy heavy whipping creamAdd the sugar and vanilla and continue beating on medium to medium high speed until the cream holds soft peaks.

Do not overbeat.

    Thanks for this recipe! Haven’t made it yet, but just a suggestion for the whipped cream. The coconut sugar is usually grainy so I put it in the food processor for a few pulses before adding it to the cream. Not exactly powdered sugar, but it helps. I’ve also seen it just sprinkled on top

    Yum! Chocolate mousse was one of the first things I made when I was a kid too, but haven’t made it in years. I listened to you on the Another Mother Runner podcast as I ran through the streets of Marin this morning -great tips for cooking for the family!

Overnight vegan, GF, DF refrigerator oats with chi Overnight vegan, GF, DF refrigerator oats with chia, almond butter and strawberries! This is such an easy grab-and-go breakfast! Also takes 5 minutes to make!
1/2 cup alternative milk of choice, I use almond or walnut milk 
1 TBL chia seeds
1/4 cup GF steel cut or rolled oats
2 TBL unsweetened shredded coconut 
1 TBL almond butter
1 TBL maple syrup - feel free to add more if you like things sweeter, or you can add 1 tsp vanilla on top of the maple syrup 
Pinch of pink Himalayan sea salt
Optional - Pinch of cinnamon 
2-3 strawberries cut into small pieces
Put above ingredients into a small glass jar, stir to combine everything, cover and refrigerate overnight! Enjoy cold, or pop in the microwave for 1 minute. If you’re looking for ways to incorporate more veggies into your diet, then these roasted red peppers make it easy, as they are jam packed full of flavor! Roasting them with a bit of avocado oil and some Celtic sea salt adds a sweet smokey depth of flavor that’s hard to describe in words. These roasted peppers will be your new go-to, as they literally take no time to prep and bake up! They’re a great stand alone healthy snack, or make a stellar side dish that pairs with just about anything!  I make these at least 4-5 times a week, (if not more) as I use them in just about EVERYTHING. Click on the slides to see step-by-step photos and the recipe is below! 
INGREDIENTS:
*3 red, yellow or orange bell peppers, sliced into thin strips
*roughly 1/2 tablespoon avocado oil
*few pinches of fine Celtic sea salt

INSTRUCTIONS:
Pre-heat oven to 450 degrees.
Line a rimmed baking sheet with parchment paper.
Wash pepper, and holding from the top near the stem, slice the pepper straight down each side to form 4-6 big pieces. This keeps the seeds and ribs intact in the center and not all over your counter.

Slice the big pieces of pepper into thin slices.

Toss sliced peppers onto the baking sheet, drizzle them with avocado oil and a few pinches of sea salt, and mix them all together. 

Roast the peppers in the preheated oven for roughly 12-15 minutes, giving them a toss with some tongs around the 10 minute mark, until tender and slightly charred on the skins.
Eat them straight off the baking sheet, or let cool and store in a covered container in the fridge for up to 4 days.

They’re super addicting, so you may find yourself sneaking back for more! They are teenager approved too! (see last photo) Recipe below plus step by step photos! 
•1 TBL olive oil 
•1/2 to 3/4 cup raw unsalted almonds 
•pink Himalayan sea salt to taste 
Instructions: 
Add 1 TBL olive oil to a skillet.
Set it over medium-low heat
Add almonds and stir to coat in the oil
keep an eye on them and stir occasionally until toasted brown 
Slide toasted almonds onto a paper towel lined plate to catch excess oil
Liberally sprinkle almonds with pink Himalayan sea salt! 
Let almonds cool for a bit.
Pour into a bowl and enjoy! 😋
