almond flour pancakes stacked with bowl of blueberry compote and jar of milk

Almond Flour Pancakes

These are pancakes that you don’t have to feel guilty about eating because they’re made with almond flour, use raw honey for the sweetener, almond milk for the dairy, and coconut oil as a substitute for butter or vegetable oil, which will not only speed up your metabolism, but fuel your brain.

Eli and Zoe with roasted broccoli

Roasted Broccoli

My kids are HUGE fans of roasted broccoli. Roasted broccoli is like candy in this house, seriously! When I make up a batch of roasted broccoli my kids literally eat it out of the pan, they just tell me to plop the pan on the counter and they dig in.

Carrot ginger dressing displayed on the table with vegetables

Carrot-Ginger Dressing

This dressing is a tiny bit sweet, but has a bit of a spicy kick to it from the ginger, and it’s vegan to boot! It’s a wonderful dressing to toss in with some mixed greens, but also works well as well as a dip for fresh-cut veggies like sliced avocado, carrots, cucumbers, peppers, broccoli, cauliflower or sliced heirloom tomatoes (yum!).

Cold pesto pasta with chicken and sundried tomatoes

Cold Pesto Pasta with Chicken and Sun-Dried Tomatoes

The combination of pesto, sun-dried tomatoes and kalamata olives is amazing! It’s the perfect pasta to bring to a picnic or potluck, and an easy weeknight dinner as it can be made ahead of time. I love it when I can come home after a busy day, open the fridge and have dinner all ready to go. All you have to do is pair this pasta with a salad and a baguette, and you have yourself the perfect meal for a hot summer night.

Almond butter brownies on the table with strawberries and a glass of milk

Almond Butter Brownies

ALMOND BUTTER BROWNIES!!!  Yes, you heard me right, almond butter brownies, not chocolate fudge brownies, so I apologize for those of you that were looking for something chocolately, next time!  These are a bit of a healthier brownie, if there is such a thing as a healthy brownie. These brownies are made with 6 simple ingredients, almond butter, honey, an egg, vanilla, salt, and baking soda.

Vegan kale salad with citrus dressing in a bowl and fork

Vegan Kale Salad with Citrus Dressing

This is such a simple and fresh salad, and it’s so different from my other kale salads, as it doesn’t have any cheese in it. We all know how much I love cheese, but I don’t miss it in this salad at all because the nuts, fennel and oranges really give this salad some flavor.

Rosemary skillet chicken

Rosemary Skillet Chicken

This is the perfect weeknight chicken recipe folks. The marinade comes together in a flash and can be made ahead in the morning, so when you get home from work or just from a long busy day, all you have to do is roast up the chicken. Yippee! The chicken takes under 30 minutes to roast up to perfection, but tastes like a chicken that has been cooking for hours.

Quinoa snack bars

Quinoa Snack Bars

These are not the prettiest bars I’ve ever photographed, but they sure are tasty and pretty healthy to boot. They’re filled with the goodness of quinoa, quinoa flour, chia seeds, goji berries, local raw honey and so much more. You can even make these gulten-free by using gluten-free oats.

Sweet potato and farro salad in a bowl on the table.

Roasted Sweet Potato and Farro Salad

This is to me a perfect winter salad because it’s savory, sweet and nutty all at once. Roasted sweet potatoes paired with the chewy nutty texture of farro and topped with fresh dill and arugula greens, it’s almost too pretty to eat.

Chicken soup on the table in a white bowl with a popover and spoon nearby.

Simple Weeknight Chicken Soup

I’ve been making lots of soup lately. When my life is in disarray, making soup calms, grounds and comforts me. There’s just something so comforting about sipping a warm bowl of soup on a cool winters night, and nothing says comfort like chicken noodle soup right?
