Rich Roll’s vegan almond pesto paired with brown rice pasta, sun-dried tomatoes, red peppers, spinach and artichoke hearts. It’s a flavor bomb!
If you were to ask me what recipe I make the most often, it would be this lemon vinaigrette. This vinaigrette is a staple in my house and if I could bottle it and sell it, I would! This is the honestly the BEST AND SIMPLEST VINAIGRETTE and is my GO-TO for EVERYTHING! This lemon vinaigrette literally takes 5 minutes to make, and has no added sugar or other random ingredients that you can’t pronounce.
So, I’ve got some BIG news to share! I gave notice to my big corporate job and I’m going to dive back into this blog and this space, and see where it takes me. I’m going to play with life a bit and prioritize things that bring me joy, and this blog and connecting with you all brings me great JOY!
Happy New Year Peeps! I’m back with a new recipe! Vegan butternut squash soup! We’re day two into this new year and I have to tell you that I’m feeling excited, grateful and hopeful! I want to PLAY more, SHARE more, SPREAD more JOY and POSITIVITY!
I just had to post this farro salad because I’m literally making it ALL the time, (obsessed) and the kids and I are devouring it. It’s SO simple to make and pairs with just about anything, chicken, steak, fish, you name it. It’s even awesome on its own, and makes the perfect salad to bring to your next picnic or potluck.
If you’re a fan of Mexican, then this chicken enchilada bake is going to become a staple in your house. It was rated a 10-plus in my house, and is totally going on the monthly dinner rotation. YAY! I’m so happy that I found something new to make my kids for dinner instead of the same old same old.
We’re a burger loving household. I swear we crave a burger about once a week! We love all types of burgers from turkey, chicken, to buffalo and veggie. Burgers make such an easy weeknight meal because all you have to do is form the patties, toss them on the grill, pair with them with a simple salad or roasted vegetable, and voila, dinner is served. Easy peasy weeknight cooking!

The flavors meld, the messiness is forgotten and thus balance is created, as the inner components compliment and come together to create this beautiful satisfying sandwich.
So, I’m thinking of starting a new series on the blog called, weeknight dinner 101. It’s something new that I’m testing out and playing around with, so I really
Don’t you just want to take a fork and dig into that salad? I mean look at all that color and texture. There’s roasted beets, hemp seeds, diced avocado, broccoli sprouts, sprouted sunflower seeds (good source of protein, magnesium & Omega 6) and sprouted pumpkin seeds (good source of protein, iron & Omega 6). Lot’s of good stuff going on! I’m totally craving this salad now as I write up this post, so I think I know what I’m having for dinner tomorrow night…
