I just had to post this farro salad because I’m literally making it ALL the time, (obsessed) and the kids and I are devouring it. It’s SO simple to make and pairs with just about anything, chicken, steak, fish, you name it. It’s even awesome on its own, and makes the perfect salad to bring to your next picnic or potluck.

Today I’m going to show you how to roast whole beets without foil. I found an even easier and less wasteful technique, where the beets come out perfect, flavorful and tender every time, and that is to just put the whole beets on a layer of parchment paper, and roast them away. Easy peasy!

We’re BIG fans of Taco Tuesday in my house, but Taco Tuesday doesn’t have to be on Tuesday, we like burritos, tacos and burrito bowls any night of the week. Since I discovered the best, tastiest and easiest way to cook up brown rice, I find that we’re eating a lot of burrito bowls and burritos, as they’re the perfect thing to whip up on those busy weeknights, and they also make great lunches to pack up for the kiddos.
First off I want you to know that my kids are totally obsessed with this rice, like licking their plates clean obsessed. It’s 6:00 am on Friday and I’m baking them a fresh batch for their lunches and pairing it with some leftover chicken thighs and mushrooms.
