This is the BEST grilled cheese sandwich EVER. Adding roasted broccoli to a grilled cheese sandwich is genius, as it adds an extra punch of flavor and texture, and honestly makes you feel less guilty about eating a grilled cheese. Tossing some broccoli into a grilled cheese is also a great way to sneak some veggies into your little ones, so for those of you that have some picky veggie eaters, you may want to give this sandwich a try. It’s kid approved in my house!

This is such a simple and fresh salad, and it’s so different from my other kale salads, as it doesn’t have any cheese in it. We all know how much I love cheese, but I don’t miss it in this salad at all because the nuts, fennel and oranges really give this salad some flavor.

So, yes, this is another kale salad recipe, (sorry for all of the kale recipes lately folks) but it has Brussels sprouts in it, so you’re getting 2 amazing veggies in one salad! Bonus! My foodie friend Carolyn passed this recipe onto me and told me I had to try it. I totally trust Carolyn, and when she tells me that I need to try something, I do, no questions asked. I was nervous to have the kids try this because Eli despises Brussels sprouts, like totally gags on them. So the first time I made this up, I didn’t tell him that there were Brussels sprouts in it (I know, I’m a mean and sneaky mama). He ate the salad and really liked it. I then told him after he finished that he just ate some Brussels sprouts, and you know what, he said he liked them raw mixed in with the kale! Sometimes you just have to be a bit sneaky moms!

We’re a total popover loving family. We love the traditional popovers, sugar-crusted popovers and now these rosemary and sea salt popovers. Popovers are my carb of choice because they’re SO easy to make up and require a few simple pantry ingredients. They may look all fancy and formal with their big puffy tops and seem difficult to make, but let me tell you, they’re one of the easiest recipes to make. They even have an exact cooking time which makes them even easier to make up.

Thanks to everyone for voting this week on which recipe you wanted to see posted next.  As you can see from the comments, this pumpkin cake won hands down.  I’m totally not surprised because it’s fall and everyone has pumpkin and cake on their minds. It really wasn’t a fair competition, was it?  I mean salad vs cake?  I knew who the winner was before I finished the post, but I just wanted to double-check and make sure that’s what you all wanted.  So thanks 🙂

Sweet Potato and Chipotle Soup

This soup is wonderfully creamy, but without the cream, as it’s dairy free and vegan to boot. Woo hoo! I love that it’s made with simple whole-food ingredients and most of them I already had stocked in my pantry, besides the sweet potatoes that is. The soup is sweet and creamy but with a spicy kick to it from the chipotle. John and I loved this soup. The kids liked it, but it’s not their favorite soup. They seemed to like it a bit more when I threw on some homemade croutons, as they liked having that extra texture.
