  • 6 graham crackers (honey or plain)
  • marshmallows, mini or large
  • 3-ounces bittersweet chocolate chips - basically 1-ounce of chocolate per graham cracker
  1. Pre-heat your broiler, and adjust your oven rack so it's near the top. Get out a smaller sized baking sheet (one that can fit in your freezer) and line it with parchment paper. The parchment paper will make for easier clean up.
  2. Place 3 graham crackers on top of the parchment paper and top each graham cracker with marshmallows, make sure that you cover the whole graham cracker.
  3. Place baking sheet under the broiler. Broil marshmallows until they brown up. Stay close to your oven, as this will be a fast process. Pull out the browned marshmallows.
  4. Immediately put the other 3 graham crackers on top of the browned marshmallows, and push down so that the marshmallows adhere to the graham cracker. You're basically making a sandwich here.
  5. Put the chocolate chips into a microwavable cup or ramekin.
  6. Place the chocolate chips into the microwave for 30 seconds. Take out the chocolate and give it a stir with a spatula. You can also melt the chocolate chips in a double boiler over a pan of simmering water.
  7. Put the semi-melted chocolate back in for 20 seconds more and then give it one final stir. The chocolate should be melted at this point. If it's not entirely melted, then just put it back in for 10 more seconds.
  8. Pour a bit of melted chocolate on top each graham cracker. Take a spatula and spread out the chocolate to form a thin layer (it's like frosting a cake). Make sure to drizzle some chocolate onto the sides of the graham crackers, as well as onto the melted marshmallows.
  9. Stick the tray with the graham crackers into the freezer for a minimum of 15 minutes, or until the chocolate hardens.
  10. When hardened, use a knife and cut the grahams into any size that you want. Eat them as is, or feel free to break them into smaller bite-sized pieces and top them on some vanilla ice cream.
  11. Store leftovers in the freezer in a freezer bag, or glass container.
