cilantro-lime mayonnaise
  • ½ cup mayonnaise - regular mayo not miracle whip
  • ¼ cup chopped fresh cilantro
  • 2 teaspoons fresh lime juice
  • 2 garlic cloves, minced
  1. Let's wash up and mince the cilantro.
  2. Cilantro can be dirty and I find the easiest way to clean it is to fill a small bowl with water and take the cilantro by the stems and swish them around in the water. I empty out and re-fill the bowl with clean water until the cilantro is clean and the water in the bowl is clear. You can dry the cilantro in a salad spinner or simply wrap it up in a clean flour sack towel or paper towels.
  3. Next, take a knife and scrape the leaves off the stems. You are still going to have some smaller stems attached, but that's ok. You can also just pull the leaves off of the stems as well. Whatever way is easier for you.
  4. Take the cilantro leaves and bunch them together and start mincing the leaves, keep bunching the leaves back together until you get them all minced.
  5. In a small bowl or ramekin, whisk together the ½ cup mayonnaise, ¼ cup minced cilantro, 2 teaspoons lime juice and 2 minced garlic cloves until well combined.
  6. Yep, that's all there is to it. Easy peasy! You can make up this sauce a day ahead, just be sure to refrigerate it in a sealed container.
