Caramel, sea salt and my favorite brownies can only mean one thing!  The best dessert ever, and so worth the 5 pounds that you will gain from one bite, just kidding!  If you follow me on Facebook and Instagram, then you saw the whole show when I made these up the other night (hint, hint).  I was craving something salty and chocolatey and hence these brownies were created. The brownies barely made it to day 2.  I’m serious, we just couldn’t stop ourselves at one.  John and the kids were very happy campers, and all came to an agreement that its pretty cool having a mom who has a cooking blog.  I pinky swear this recipe will be on the blog next week.

Oh, here’s a quick photo that I took of the finished product. Yup, these brownies are dark, gooey and fudgey.  Here’s the link to the salted caramel brownies.

Speaking of healthier activities, besides stuffing my face with brownies.  John and I had a blast from the past last Sunday when we pulled out our old roller blades. I seriously haven’t used my pair since 1997, but it felt AMAZING and it’s just like riding a bike, it all comes back to you. Rollerblading was John’s and my thing when we lived in Minneapolis.  We used to rollerblade all the time around the city lakes. I think it’s something we’re going to take up again together. Below is a photo of John and I being silly and trying to dance on the skates, or should I say trying to keep each other balanced!

Zoe tried rollerblading as well, and I have to say that the Instagram photo she posted is super cool. I love how retro it looks!  She’s got the attitude!

Anyway, my past week was like these brownies, a happy success. It was full of sunshine, happiness and just plain glorious days! Don’t you love it when you have weeks or days that just flow like that? I know one of the reasons I had such a great week was that I started out each day scripting it in my mind. My soul coach Holly, posted this below quote on Facebook Monday morning. Her words of wisdom spoke to me, and I set the intention to do as she said below, and I honestly think it made a difference. Give it a try.

Every day is a new opportunity to begin again – to have a fresh start. Create your day in your mind first and then go live it. Make it a habit to send the thoughts of beauty, grace, abundance, health and success into your day and watch your thoughts become your experience.

Roasted red pepper and arugula whole-wheat pizza and kid friendly caesar salad.  I always serve up this pizza the same week I make my roasted red pepper soup, because it’s just so easy to roast up a bunch of red peppers at one time.

“You say its your birthday, It’s my birthday too-yeah.”  Guess what?  It’s Zoe’s birthday!  Whoo hoo!  We’re officially going to have a teen in the house. I seriously can’t believe it!  We’re heading out to one of our favorite restaurants tonight, Buckeye Roadhouse, where I actually got the idea for the below kale salad that I will showcase on the blog Wednesday.

  1. I assume those are your famous brownies with the base you always use and have posted about, doctored up w/ that caramel (which looks amazing) and the brownies are epic!!!

    I grew up rollerbladed all the time around the city lakes in Mpls and that was my h.s. and college ‘thing’ to do! Nothing better than in the spring and summer being outdoors and doing it. R’blades are a Mpls company (used to be anyway) and when Scott and I first met, we used to Rblade together. Need to do that again. LOVE!!! that pic of you and John and just of you. You look amazing!!! 🙂

    1. Hey Averie! Yes, those are the Robert’s Absolute brownies. Rollerblading around the lakes is just the best! I miss those lakes and I told John that I want to rent some blades and go around the lakes again this summer when we visit. I’m not surprised that you were a blader as well. Something else that we have in common 🙂

  2. Oh my deliciousness! Those brownies look killer. And I love all the rollerblading photos. I tried it a few times back in the day but wasn’t very good at it. Love that picture of you and John, and Zoe has got the roller derby look goin’ on right there!

    1. Hey Sharon! It’s been one of those crazy weeks for me as well and I haven’t had much computer time. I was up all hours last night getting Eli’s room ready for his new loft bed and dresser, and then got up at 4:30 this morning. It’s going to be a long day. I can’t believe that you were not good at rollerblading, what’s up with that, you’re a hula girl! You should have great balance 🙂
      I hope that Jake is feeling better and I’m glad you had some sun this past weekend 🙂

  3. i don’t think i could ever get sick of looking at your photo for weekly menu…chocolate carmel sea salt…yes please…and the photo of zoe is too cute…a teenager that seems so crazy…i am going crazy thinking of my first baby starting kindergarten this fall which one must think of now since school registration begins. ugh tears. your photo of meals this week look aHHHHmazing! that pizza looks perfect.

I can’t believe I have an almost 13 year old either 🙁 I’m happy because I love seeing her blossom and grow, but I can’t believe how quickly the time flies.   4. 13! Say it ain’t so! Where did the time go? I will never forget Zoè and Cat rolling around on the mats at Jimbore. I think it’s safe to say, we’ve all grown over the years-all for the better. As for those brownies…well all I can say is yum! I did a similar thing recently, kids needed a dessert for the science fair and I so cheated. Didn’t have time to make something from scratch so made the Ghiradelli Double Chocolate Brownie mix with the Trader Joe’s Fleur de Sel caramel sauce…..surely wasn’t on par with your homemade version that I hope to try very soon! Looking forward to strapping on those rollerblades with you soon.

  5. that classic caramel sauce sounds amazing and the perfect addition to brownies, ice cream, cake, apples- you name it! Can you tell I like caramel? LOL! Love the shot of you and hubs. my friend you LOOK AMAZING. Really- AMAZING! Zoe is a knockout- do you just have boys beating down the door to date her or what? I use to rollerblade ALL OF THE TIME in highschool and after this post I am wondering were my old pair are? I need to dust them off and give them a try again too! Wish we lived close and we could rollerblade together. What a pair we would be- we could rollerblade to coffee shops and small outdoor grills and just eat all day! LOL!

You need to move to Cali girl, like seriously, and then we can be roller blading buddies and coffee and lunch buddies as well. I don’t want to hear about boys liking Zoe yet. I just clicked over to read the facebook article…sooooo hilarious Normally I am way too ADD to click over and then actually read the entire thing….but very funny and I only left once in the middle of reading…to add a few things to my list so i can make brownies later today!! You are so darling in your rollerblades!
