Vegan Mexican Quinoa Bowl

These vegan Mexican quinoa bowls have become a weekly staple in our house. They’re naturally vegan, but are full of flavor from the avocado tahini, and spicy chipotle tahini sauce. These bowls are jam packed with plant protein, as quinoa is a complete protein, and beans when paired with the quinoa, make a complete protein too. This bowl is balanced and satisfying from the slow burning carbs, healthy fats, plant protein, and will honestly sustain you for hours.

Make ahead Ayurvedic spiced warm quinoa cereal.

Make Ahead Ayurvedic Spiced Warm Quinoa Cereal

I’m a warm porridge breakfast gal, even in the summer. I like to warm and nourish my insides first thing in the morning. With that being said, I don’t want to “cook” anything from scratch in the morning, so if I can make something ahead and heat it up, then I’m a happy camper.

It dawned on me one morning as I was adding almond milk and spices to my leftover quinoa, that I could save myself 5 minutes, but making the golden milk ahead of time!  This was an “a ha” moment for me and a hack I wanted to share those of you what want a warm breakfast too, but want something in under 5 minutes.

Perfectly Cooked Quinoa

I make quinoa all the time and I’ve discovered the perfect liquid ratio that gives you perfectly cooked quinoa that’s not watery or over cooked.

One-Pan Mexican Quinoa Wraps

I’m SO crazy for these wraps, like totally insanely crazy for these, and I’ve been making them non-stop for the past 3 weeks. Marin mama might need to be committed! They’re honestly my new favorite lunch and/or dinner, and the bonus is that Zoe loves them as much as I do. Yay Zoe! I’m working on Eli, as he likes these wraps, and will totally eat them, but he doesn’t crave them the way Zoe and I do. I do have to remember that he’s only 10, and his palate hasn’t totally evolved the way Zoe’s and mine has. So Eli, I’ll give you a few more years to be lukewarm to my healthy recipes! Just kidding cutie!

Quinoa with Tomatoes, Cucumber, Parsley and Mint

This is the perfect healthy summer salad! It’s chock-full of fresh herbs, cucumbers and tomatoes, which are at their ripest in the summer months. I used heirloom tomatoes for this recipe, and let me tell you, this salad was BURSTING FULL OF FLAVOR! I might even say that it was a bit better the next day when all of the flavors had a chance to meld together!

Easy Overnight Hot Quinoa and Steel Cut Oats

Yes, I’m a bit obsessed with breakfast! It’s my absolute favorite meal of the day! I love starting out the day with an easy, tasty, hot and healthy power-filled breakfast, and this cereal fits the bill. It’s a blend of quinoa and steel-cut oats, (which in my eyes and tummy is pure perfection) that can be made the night before, (in under 6 minutes) which is even better. All you have to do come morning is turn on the stove and re-heat the cereal, easy peasy.

Quinoa snack bars

Quinoa Snack Bars

These are not the prettiest bars I’ve ever photographed, but they sure are tasty and pretty healthy to boot. They’re filled with the goodness of quinoa, quinoa flour, chia seeds, goji berries, local raw honey and so much more. You can even make these gulten-free by using gluten-free oats.

Quinoa Wrap with Black Beans, Feta and Avocado

What makes this wrap so good? Well, you take our favorite avocado-tahini dip, mix it in with some quinoa, black beans, a bit of melted Monterey jack and feta, throw in some sliced avocado, some spinach leaves, and wrap it all in a whole-grain tortilla, and oh my goodness, you have yourself one amazing wrap that’s not only healthy, but full of flavor.
