If you were to ask me what recipe I make the most often, it would be this lemon vinaigrette. This vinaigrette is a staple in my house and if I could bottle it and sell it, I would! This is the honestly the BEST AND SIMPLEST VINAIGRETTE and is my GO-TO for EVERYTHING! This lemon vinaigrette literally takes 5 minutes to make, and has no added sugar or other random ingredients that you can’t pronounce.
So, I’ve got some BIG news to share! I gave notice to my big corporate job and I’m going to dive back into this blog and this space, and see where it takes me. I’m going to play with life a bit and prioritize things that bring me joy, and this blog and connecting with you all brings me great JOY!
Happy New Year Peeps! I’m back with a new recipe! Vegan butternut squash soup! We’re day two into this new year and I have to tell you that I’m feeling excited, grateful and hopeful! I’m also feeling like I can do anything I set my intention and heart to! I turned 50 this past summer and realized there are a lot of things that I want to do in these next 50 plus years. I want to PLAY more, SHARE more, SPREAD more JOY and POSITIVITY!
I just had to post this farro salad because I’m literally making it ALL the time, (obsessed) and the kids and I are devouring it. It’s SO simple to make and pairs with just about anything, chicken, steak, fish, you name it. It’s even awesome on its own, and makes the perfect salad to bring to your next picnic or potluck.
If you’re a fan of Mexican, then this chicken enchilada bake is going to become a staple in your house. It was rated a 10-plus in my house, and is totally going on the monthly dinner rotation. YAY! I’m so happy that I found something new to make my kids for dinner instead of the same old same old.
