For those of you that follow my stories on instagram, you’ve been seeing these oven roasted potatoes quite a bit in my stories lately, and that’s because I’ve been making them tons, and tossing them into everything!
If you’re looking for ways to incorporate more veggies into your diet, then these roasted red peppers make it easy, as they are jam packed full of flavor! Roasting them with a bit of avocado oil and some Celtic sea salt adds a sweet smokey depth of flavor that’s hard to describe in words, it’s just something you have to try.
This oven baked forbidden black rice is my latest OBSESSION! It’s SO easy to make, and comes out perfectly every time! It has an amazingly sweet, buttery, nutty flavor and this amazing chewy texture! It’s seriously the bomb, and I’ve been making it non-stop for the past 2-weeks!

I just had to post this farro salad because I’m literally making it ALL the time, (obsessed) and the kids and I are devouring it. It’s SO simple to make and pairs with just about anything, chicken, steak, fish, you name it. It’s even awesome on its own, and makes the perfect salad to bring to your next picnic or potluck.
If you’re a fan of garbanzo beans or chickpeas (whatever you want to call them) then you will LOVE them all crispy and crazy! Hmmm…. maybe that’s what I should call them, crazy crispy chickpeas,
“Grab-and-go” breakfasts are a huge part of my life these days. Weekday mornings are hectic, and some mornings I just want something that I can quickly grab from the fridge and take with me and chow down on the ferry, or in the office. I just love overnight refrigerator oats, because they’re ULTRA EASY to make, (takes just 5 minutes), are ready to go in the morning, and healthy to boot!
