Roasted broccolini. This is one of our favorite sides because it’s tasty, super healthy, pairs with just about anything and takes just 7 minutes to roast up. You can also do this method with green beans too! Let’s go! 🤗
Ingredients:
2 heads of broccolini
Avocado oil
fine Celtic sea salt
freshly ground pepper

Instructions
Pre-heat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
Wash up broccolini, slice up florets. Smaller pieces work best because they roast up quicker.
Toss the broccolini onto the baking sheet, drizzle it with some avocado oil, a few pinches of Celtic sea salt and freshly ground pepper, and mix it all together. Note: The amount of oil, salt and pepper you add is really to taste.
Roast the broccolini in the pre-heated oven for 7-8 minutes. We tend to like ours broccolini a bit on the al dente side, so we only roast our broccolini for 7 minutes.

Overnight Buckwheat Porridge. This overnight buckwheat porridge is naturally gluten-free, dairy-free, and vegan to boot! It’s chock full of healthy fats, protein and will keep your blood sugar stable, and give you energy to go for hours. It also tastes AMAZING!
Ingredients:
1 cup raw organic buckwheat groats, not kasha – pre-soaked
1 can unsweetened coconut milk
2 1/2 cups almond milk, or alternative milk of choice
1/4 cup chia seeds
2 tablespoons hemp seeds
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon pink Himalayan sea salt

Directions:
*Note: You will have to soak the buckwheat groats ahead of time, for at least 6 hours, and they can soak up to 20 hours. Put 1 cup buckwheat groats and 2-3 cups filtered water into a glass container fit with a lid. Let it soak on the counter all day.

Pour soaked buckwheat groats into a fine mesh strainer and rinse under cold running water, tossing them around with your hands, until most of the sliminess is gone.

Get out a large pot fit with a lid. To the pot, add rinsed buckwheat groats, coconut milk, almond milk, chia seeds, hemp seeds, vanilla, cinnamon, and salt. Give mixture a good stir to combine, cover with lid, and let sit overnight in the fridge.

In the morning, give porridge a good stir and set the pot (uncovered) over medium-high heat, stirring occasionally, until the porridge bubbles and comes to a boil. Lower the heat to medium-low, and cook, stirring occasionally, until porridge thickens, and is heated through.

Serve the porridge into individual bowls, add sweetener of choice, some fresh berries, flax meal, almond butter.

Store the leftovers in a sealed container in the fridge. Leftovers will last 2-3 days. #buckwheat #buckwheatporridge #porridge #gfbreakfast #proteinbreakfast #breakfast

Kitchen hack! How to quickly mince ginger! This is a hack I learned in natural chef school! It’s SO much easier than grating ginger with a microplane, or grater! I mean who has time for that? 🤔 It’s a 1.2.3 step process.
1. peel ginger with back of spoon.
2. Put it in a mini prep.
3. Pulse until it’s grated! That’s all there is to it.

This no-sugar frozen berry chia spread is better t

This no-sugar frozen berry chia spread is better than any store bought jam/jelly that has tons of sweeteners and thickeners in it. My family, kids included, prefer this over any store bought both jam/jelly. This spread only takes 15 minutes to make and uses 4 simple ingredients.

We spread this on PB&J’s, toast, top it on morning oats, chia puddings, or Greek yogurt. It’s a jam but also serves as a compote.

I don’t add sugar or sweetener to this spread because honestly, you don’t need it. I’m using frozen berries which are at the peak of flavor, so the spread is naturally sweet.

The chia seeds are the thickening agent here, and they also add some fiber, anti-anti-imflamatory omega-3 fatty acids, protein and calcium to boot!
Recipe 👇
Ingredients:
1 1/2 cups frozen blackberries, raspberries you can also use frozen, or blueberries
1/2 cup filtered water
Pinch of pink Himalayan sea salt
1 tablespoon chia seeds
Directions:
Add the frozen berries, water and pink Himalayan salt to a saucepan set over medium-high heat, and bring to a boil. Once boiling, reduce heat to low, and simmer for 10 minutes, or until berries are softened. Feel free to break up some of the blackberries with a spoon if you want the spread to be smoother.
Carefully pour berry spread into a small glass jar (one that has a lid) and add the chia seeds. Give mixture a good stir and let sit out until it cools. These oven roasted sweet potatoes are one of my favorite things in the fall and winter when they’re in peak season. They honestly taste “sweet” and are the perfect GF carb to pair with a soup or salad. They’re one of the most popular recipes on my website, give them a try and you’ll know why. 🤗
Ingredients:
2 medium sweet potatoes, washed and scrubbed
1-2 tablespoons unrefined coconut oil
Few pinches of coarse or fine Celtic sea salt
Directions:
Preheat oven to 400 degrees.
Line a rimmed baking sheet with parchment paper. Rub parchment paper with a bit of coconut oil.
Wash and scrub sweet potatoes, and cut them in half lengthwise.
Generously rub both sides of each sweet potato with coconut oil and then sprinkle with sea salt.
Tip: You don’t need to melt the coconut oil, as it will soften in your hands when you rub it on the sweet potatoes.
Place the sweet potatoes cut-side down on the parchment paper. Sprinkle tops of sweet potatoes with additional salt.
Roast them in the pre-heated oven for about 25-30 minutes (roasting times can vary, as sweet potatoes vary in size).
The best way to tell if a sweet potato is finished cooking is to use your hands. They’re finished when you can easily squeeze them, and the skins will dent when poked with a finger, also the skin should easily pull away from the potato. Flip them over and the interiors will be soft, and the edges slightly browned and caramelized.
Slather each sweet potato with some coconut oil or butter and additional sea salt to taste. The coconut oil and butter will melt into the sweet potato and it will glisten and beckon for you to dig in. 2 ripe avocados
2 TBL fresh lime juice
1/4 cup cilantro leaves, finely chopped
3/4 cup red onion, finely diced
1 tsp coarse sea salt
Put all ingredients into a bowl, mash together with a fork until guacamole is well blended, but still chunky. Season to taste with a bit of extra salt and/or lime juice.

Turmeric tahini dressing. Let’s just say I’m love with this dressing, and I’ve been topping it on EVERYTHING. It’s got a tangy, nutty and earthy flavor, and the vibrant golden yellow color makes any plain Jane dish look like a piece of art.
Ingredients:
1/4 cup raw tahini - I love @socotahini
2 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon turmeric powder
1 teaspoon fine Celtic sea salt
1/4 teaspoon freshly ground pepper
1/4 cup filtered water
Directions:
In a small bowl, or wide mouth glass jar fit with a lid, whisk together the tahini, lemon juice, olive oil, turmeric, salt, pepper and ¼ cup water until smooth. Add more salt and pepper to taste.
Pour dressing into a small jar fit with a lid, if you whisked the dressing together in a bowl.
