This oven baked forbidden black rice is my latest OBSESSION! It’s SO easy to make, and comes out perfectly every time! It has an amazingly sweet, buttery, nutty flavor and this amazing chewy texture! It’s seriously the bomb, and I’ve been making it non-stop for the past 2-weeks!
Happy New Year Peeps! I’m back with a new recipe! Vegan butternut squash soup! We’re day two into this new year and I have to tell you that I’m feeling excited, grateful and hopeful! I just had to post this farro salad because I’m literally making it ALL the time, (obsessed) and the kids and I are devouring it. It’s SO simple to make and pairs with just about anything, chicken, steak, fish, you name it. It’s even awesome on its own, and makes the perfect salad to bring to your next picnic or potluck.

We’re BIG fans of Taco Tuesday in my house, but Taco Tuesday doesn’t have to be on Tuesday, we like burritos, tacos and burrito bowls any night of the week. Since I discovered the best, tastiest and easiest way to cook up brown rice, I find that we’re eating a lot of burrito bowls and burritos, as they’re the perfect thing to whip up on those busy weeknights, and they also make great lunches to pack up for the kiddos.
My last post showed you all how to roast seasonal fall vegetables, so here’s a great and simple way to turn them into a meal, top them on a PIZZA! Topping a pizza with roasted vegetables, some fresh rosemary and a few dollops of ricotta turn a plain-Jane pizza into an amazing sweet, savory gourmet meatless pizza. That was a mouthful, but this fall roasted vegetable pizza has all of that, and then some!
First off I want you to know that my kids are totally obsessed with this rice, like licking their plates clean obsessed. It’s 6:00 am on Friday and I’m baking them a fresh batch for their lunches and pairing it with some leftover chicken thighs and mushrooms.
I’m SO crazy for these wraps, like totally insanely crazy for these, and I’ve been making them non-stop for the past 3 weeks. Marin mama might need to be committed! They’re honestly my new favorite lunch and/or dinner, and the bonus is that Zoe loves them as much as I do. Yay Zoe! I’m working on Eli, as he likes these wraps, and will totally eat them, but he doesn’t crave them the way Zoe and I do. I do have to remember that he’s only 10, and his palate hasn’t totally evolved the way Zoe’s and mine has. So Eli, I’ll give you a few more years to be lukewarm to my healthy recipes! Just kidding cutie!
This is the perfect healthy summer salad! It’s chock-full of fresh herbs, cucumbers and tomatoes, which are at their ripest in the summer months. I used heirloom tomatoes for this recipe, and let me tell you, this salad was BURSTING FULL OF FLAVOR! I might even say that it was a bit better the next day when all of the flavors had a chance to meld together!

I make this pasta up all of the time! I love it because it’s simple and easy, kid approved and even makes enough leftovers for the kid’s lunches the next day! Yippee!
