What?? Another granola recipe Marin mama? Yep, I’m posting another granola recipe peeps, because I’m an oat crazed gal who loves something sweet and crunchy to nosh on in the afternoon, and this granola bark fits the bill! It’s crunchy, sweet, (but not too sweet) full of goodness and very addicting! I made this bark up the other day and it went very fast, so fast that I had to make another batch the next day so that I would have something to photograph. For those of you that follow my blog, you know that I’m pretty much obsessed with kale and popovers. I have 20 kale recipes on my blog (wow, I guess I really am obsessed) and a mere 6 popover recipes, so maybe I’m a tad more obsessed with kale than popovers, but I still love popovers! My friends actually tell me that when I open my Marin mama cooks cafe, (I’m going to try and go for this in the next year or so) that I need to have popovers on the menu, as they’re one of my signature things. I agree, as they’re the perfect carb to pair with soups and salads! Keep your fingers crossed on my cafe idea! It’s one of my dreams!

My little friend Tatum helped me come up with this smoothie concoction! We were making up smoothies one day and I asked her what type of smoothie sounded good to her, and she said, “strawberries, yogurt, banana and a bit of honey.” Bingo! Well done Tatum! I love the simplicity of her recipe, as it only requires 3 simple ingredients, a ripe banana, fresh or frozen strawberries and some vanilla Greek yogurt! Easy peasy and super tasty! This is the perfect spring-time smoothie, as strawberries are starting to come in season, at least in Northern California.

So I use shredded chicken all the time, and not just for recipes that require it. Shredded chicken is incredibly versatile, so it doesn’t hurt to keep some on hand for those times when you’re in a pinch and you need a quick meal. I keep it handy in the fridge for sandwiches, salad toppers, soups and quesadillas throughout the week. It’s so handy to have shredded chicken ready to go for those last-minute “what do I make for dinner or lunch” meals. You can toss shredded chicken into anything from pastas to soups and tacos, therefore making a simple and quick weeknight dinner!

I know it’s a bit bold to say that these are the best corn muffins, but in my humble opinion they are. I’ve sampled many corn muffins over the years, and these bad boys are basically what a corn muffin should taste like. They’re moist, a bit sweet and savory and have a nice texture and crunch from the cornmeal.

These fries are SO GOOD, SUPER ADDICTIVE and honestly as easy to make up as the frozen variety (and cheaper too). I’m serious! They’re browned, caramelized and slightly crispy on the outside, and soft, sweet and tender on the inside. Yum, Yum! I will admit that these fries are not going to be crispy, like fries that have been fried, they tend to be softer like steak fries.

This is the BEST grilled cheese sandwich EVER. Adding roasted broccoli to a grilled cheese sandwich is genius, as it adds an extra punch of flavor and texture, and honestly makes you feel less guilty about eating a grilled cheese. Tossing some broccoli into a grilled cheese is also a great way to sneak some veggies into your little ones, so for those of you that have some picky veggie eaters, you may want to give this sandwich a try. It’s kid approved in my house!

My kids are HUGE fans of roasted broccoli. Roasted broccoli is like candy in this house, seriously! When I make up a batch of roasted broccoli my kids literally eat it out of the pan, they just tell me to plop the pan on the counter and they dig in.
