Here's 2 simple recipes that will turn your plain-jane avocado toast into gourmet toast!
Recipe type: meatless meals
Serves: 1
the base:
  • 1 piece crusty artisan bread - I also love using Dave's Killer bread when I don't have a fancy loaf of bread around
  • extra virgin olive oil
  • ½ ripe avocado
  • coarse sea salt
avocado toast with arugula and hard boiled egg:
  • small handful of arugula, or baby kale
  • 1 hard boiled egg, peeled and thinly sliced - see my post on how to hard boil eggs - you can also use a fried egg instead of a hard boiled egg
avocado toast with kumquat:
  • 1-2 kumquats - thinly sliced and de-seeded
  1. Lightly brush both sides of bread with olive oil. Turn on the broiler.
  2. Put the prepared bread on a parchment lined cookie or baking sheet, place it under the broiler, and toast both sides of the bread.
  3. Toss arugula with a bit of olive oil. You can skip the arugula if making the kumquat version.
  4. Using a spoon, scoop out the avocado onto the bread.
  5. Take a fork and smash the avocado onto the bread, making sure to cover all of the bread.
  6. Top the avocado with the arugula, sliced egg and a bit of coarse sea salt for the arugula and hard boiled egg version!
  7. Top the avocado with the sliced kumquat, a bit of coarse sea salt and a drizzle of olive oil for the kumquat version. You can even add a bit of parmesan or goat cheese to this version.
  8. Super easy, tasty and delicious! Eat the toast alone, or pair it with a salad or soup.
