Overnight Refrigerator Steel Cut Oats with Chia and Strawberries

If you’re looking for an easy, healthy, gluten-free, dairy-free, vegan, grab and go breakfast that will keep you full for hours, then you have to try these overnight refrigerator steel cut oats with chia and strawberries. This is my go-to travel and weekend  breakfast. I make these oats all the time to take to Tahoe, so I have an easy breakfast to eat in the car on the way to the slopes.

Grain free paleo vegan breakfast porridge in a bowl with fruit

Grain-Free, Paleo, Vegan Breakfast Porridge

WAIT, before you scratch your head and wonder to yourself, “what the heck is Marin mama posting and making these days,” just read through this post a bit and you will gain a bit of insight into my insanity.

Beet ginger coconut soup

Beet, Ginger and Coconut Soup

This is a BIG year for Marin mama! I’m going to be finishing up Natural Chef school in March, and I therefore need to figure out my next career move before I finish school, YIKES! It’s super scary, but exciting at the same time, but a little more on the scary side, as I’m not sure what’s out there for little old me. I’m going to be spending the next few months researching, networking and getting a feel for what’s out there career-wise for me. I have some ideas brewing, but I’m not entirely sure yet what’s the best path, so I’m just going to keep following my heart, intuition and gut and see where it leads me. I will be sure to keep you all updated on where I’m heading.

Gluten free healthy cookie bites

Gluten-Free Healthy Cookie Bites

School is just around the corner and I’m all about having healthy snacks in the house for the kids and their friends to chow down on after school. I don’t know about you, but my kids come home from school ravenous and immediately ask me, “Mom, what can I have for snack?” I often just tell them to open the fridge or pantry and have a go at it. If I’m home I may make them up a smoothie, or some popcorn (well, now thankfully they’re old enough make up their own smoothies and popcorn). Most afternoons though we’re running from one activity to another, so I like to have an easy and healthy grab-and-go snack, like these gluten-free cookie bites, instead of stuffing their hands with something like goldfish.

Easy overnight hot quinoa and steel cut oats in a bowl next to coffee

Easy Overnight Hot Quinoa and Steel Cut Oats

Yes, I’m a bit obsessed with breakfast! It’s my absolute favorite meal of the day! I love starting out the day with an easy, tasty, hot and healthy power-filled breakfast, and this cereal fits the bill. It’s a blend of quinoa and steel-cut oats, (which in my eyes and tummy is pure perfection) that can be made the night before, (in under 6 minutes) which is even better. All you have to do come morning is turn on the stove and re-heat the cereal, easy peasy.

Guilt free dark chocolate chip cookies

Guilt-Free Dark Chocolate Chip Cookie Bites

Just try and keep your hands out of the cookie jar with these bad boys. These little cookie bites, even though they’re on the healthier side, are super addicting. I shouldn’t really be calling them a cookie, as they are a take on the classic Cliff Kid’s ZBAR, so they’re more of an energy bar in cookie form. Maybe I should just call them cute little energy cookie bites!

Avocado yogurt cream served with tortilla chips

Avocado Yogurt Crema

This crema is the perfect compliment for tacos, nachos, quesadillas, burritos and even tastes great alone paired with your favorite bag of chips. It also serves as a great dip for sweet potato fries!

Peanut butter chocolate chip granola

Peanut Butter Chocolate Chip Granola

This granola is not what I would classify as a healthy breakfast alternative. I would say that it falls into the sugar cereal family rather than the Ezekiel cereal family, but that’s ok. My philosophy when it comes to food is that it’s all about balance, and some days we want something healthy for breakfast, and some days we want something naughty like this granola! This granola is a cinch to whip up, as it only takes 30 minute tops, and requires only 6 simple pantry ingredients! Easy peasy!

Toasted overnight steel cut oats

Toasted Overnight Steel Cut Oats

I love steel cut oats. I love their chewy texture and creamy consistency. They’re the perfect comfort food on a cold morning, and ever since I figured out the lazy overnight way to make them, I eat them at least 2 times a week, if not more. Goodbye instant oats, say hello to rich and chewy steel cut oats! My favorite go-to toppings are peanut butter and fresh fruit! YUM!

Granola bars on table with milk

No-Bake Dark Chocolate Peanut Butter Granola Bars

One of our favorite on-the-go snacks are granola bars. Granola bars are portable and tasty! We’re currently in love with these bars from Kind. I love the Kind bars because they’re a healthier bar. They’re chock-full of real ingredients like nuts, whole-grains, berries and dark chocolate. There is nothing processed in their bars, which makes me feel good about serving them up to my kids. Zoe’s favorite Kind bar (and mine as well) is their peanut butter dark chocolate bar, but she’s not entirely in love with nuts, so I decided to play around and create a “nut-free” granola bar version for her. I played around with a few different versions and came up with this bar, and let me tell you, it was a HUGE success, not only with Zoe, but with friends that I pawned them off on! These bars are not the traditional crunchy bars, they’re on the chewy side!
