For those of you that follow me on Instagram, you know of my love of fridge foraging for lunch. I make the best lunches for one by using leftovers in the fridge. This is my creative time, and if I fail at what I create it’s ok, because I will eat it regardless.

I had some leftover shredded chicken and decided to make myself some chicken salad after seeing it at the grocery store. I love sharing what I’m making live in my instagram stories, and I did that with this chicken salad recipe. I had so many followers ask me for this recipe, that I decided to create a video and post it in my feed.

I even made this chicken salad for Steve and he commented that it was the best chicken salad he’s had (see his text to me at the end of the video). To be honest, this isn’t really a recipe, but I hope it will inspire you to play around with leftovers and know that you don’t always need a recipe when creating lunch for one. Also, I think this is a great idea for a weeknight dinner for a busy family. It’s like make your own pizza night, instead it’s make your own chicken salad night! I think I’m going to start a trend here. 🙂

    This isn't really a recipe, but a base idea to get you started. If you watch the above video in the post, you'll see how I foraged what I had on hand and created something fun and tasty. If you want to see more fridge forage lunch ideas on the website, comment below with a YES!

    Ingredients

    • Roughly 3/4 to 1 cup of shredded chicken - here's my post on how to roast chicken breastsI do this weekly, so I have shredded chicken on hand for salads, tacos and sandwiches.  

    • 1-2 tablespoons avocado oil mayonnaise - how much you add is totally to taste and how wet you like your chicken salad. You could also use plain Greek yogurt if you're not a fan of mayo, the yogurt will give it a tangy flavor.

    • 1-2 green onions - thinly sliced. I loved the flavor with 2 green onions, you could also use diced red onion.

    • 2-3 large basil leaves, or use herb of choice like tarragon, thyme or oregano

    • Small handful of pecans, almonds or nut of choice, roughly chopped

    • Big pinch of pink Himalayan sea salt

    • Freshly ground pepper to taste

    Directions

    • I have a video in the above post that shows you how simple this is to make. It's sort of a cooking video. 

    • Combine the above ingredients into a small bowl and mix together using your hands or a fork.  

    • Toast some bread and sandwich the chicken salad between the bread and add some sliced tomatoes, lettuce or additional basil, or top on a salad or eat as is with some crackers.  I love Young Kobra's GF buckwheat sourdough bread.

    • You can make this ahead and store in a glass container to take to the office for a super yummy lunch. Just bring pre-toasted bread, or crackers. I also like this chicken salad over some greens with some sliced avocado and hemp seeds and pumpkin seeds.
